Roasted Red Potato Salad
The potatoes took way longer than 30 minutes to cook BUT they were tasty and the clean up was a breeze. I cut the mayo with sour cream and BUT it definitely needed more of it, it was very "sticky", I also added dill, garlic powder, 2tsp of Dijon and celery. Overall, a good start but needs some tweaking.

Spaghetti Squash I
WOW! This was the first time I have ever had Spaghetti squash and it was yummy. I made a few changes. First, I poked holes in the squash and microwaved it for about 6 minutes. Then I added fresh red and green peppers to the onion and garlic saute mix and cherry tomatoes. Perfect for all of my Mom's home grown veges.

Quick Chicken Divan
I made a few changes. I boiled fresh broccoli with 1/2 a chopped onion. I also grilled the chicken on my stove with a grill pan and seasoned it with garlic salt seasoning and pepper. The flavor was good but I think next time I will reduce the soups to 1/2 can each and maybe add some chopped garlic as well. Just needed a bit more kick.
