About this Cook
My favorite things to cook
Tradition southern meals ... one pot wonders, casseroles, soups and stews, anything with gravy! :O)
My favorite family cooking traditions
Every holiday is spent with family and friends enjoying each others company and, of course, the biggest question on everyone's mind is, "What's cookin'?"

Sloppy Joes II
My family loved it! One review stated it was better than canned sloppy joe mixes and they were absolutely correct and who doesn't have these ingredients on hand all the time!! So easy. Only change I made was adding a bit of worchestershire sauce. I would recommend 1 tsp and tasting to see if you prefer a bit more. I added about 3 tsps. This will be own only sloppy joe recipe now! Thank you so much for sharing and I highly recommend a test of this one! :O)

Bacon Ranch Pasta Salad
Easy enough to prepare. Added frozen peas for texture/color, but had no "wow" factor for me. After my own taste test, I rely on the response of family, friends, guests for deciding on a "keeper" recipe. When I mostly hear, "its fine", I know its time to move on. As others have stated, pasta becomes very dry following refrigetation. Doubling the dressing is highly recommended.

Chicken Enchiladas I
These were delicious ... espeically when coupled with the Red Enchilada Sauce recipe found on this site as well. I did exchane the green peppers for 2 small cans of green chiles and omitted the suggested water. I also boiled the chicken breast in water seasoned with bouillon and then shredded the chicken instead of cube. When you combine these two recipes with the Mexican Rice II and Canned Corn Casserole recipes found on this site, you will find yourself with a very pleasing, very complimentary Mexican meal ... with barely little left over! :O)
