Special K Cookies

Reviewed: Dec. 19, 2009
We love these! I make them as bar cookies by placing in lightly greased 9x13 pan. I then melt 6 oz chocolate chips and 6 oz butterscotch chips and spread mixture over top. Refrigerate for 20 min. then cut into bars. Delicious!!!

Italian Anise Toast

Reviewed: Dec. 9, 2009
This is an excellent recipe. I did however, modify it because while I love anise, my husband does not. I omitted the anise seed and added 1 teaspoon of almond extract. Prior to baking, I sprinkled sliced almonds on top. Everyone loved it and since it is so easy, I'll be making more later today.

Libby's® Pumpkin Cranberry Bread

Reviewed: Dec. 6, 2009
Very moist and delicious. This bread would be excellent with or without the cranberries, but I will be adding more cranberries next time.

Pineapple and Pistachio Pudding

Excellent! I added more pineapple, just out of preference. This is a great low-cal dessert to satisfy a craving for something sweet!

Best-Ever Texas Caviar

Reviewed: Jul. 5, 2009
I took this recipe to a BBQ for the 4th and it received rave reviews. So many people commented that it was delicious and requested the recipe. I served it with tortilla chips, but people enjoyed scooping it up with celery, red pepper, and even used it as a condiment on their hot dogs and burgers! I cut the recipe in half after reading other reviews and it still made plenty for the crowd of 20 that were at the cookout. I did make the full amount of dressing, but reduced the amount of olive oil by 1/2 since some people said it was too oily. It came out great! Thank you for this wonderful recipe!

Garlic Yeast Bread

I found the flavor to be a bit bland--an I used all the garlic called for in the recipe.

Sopapilla Cheesecake Dessert

Reviewed: May 8, 2009
Absolutely delicious! I made these for my husband to bring to his office party and they were a hit! I can't wait to make them again for us! I thought it was too much butter at first, and thought it may flop, but it worked and wasn't greasy. Thanks for sharing such a great recipe!

We love this chicken--very moist! I've made it several times and it comes out great everytime. I've even made it without the veggies and it is still great!

Greek Penne and Chicken

Reviewed: Mar. 2, 2009
I added black olives to this dish and my husband and I loved it. I can see how some people may not like it because the lemon and spices gives this dish an authentic greek flavor compared to an italian flavor.

Peanut Butter Chip Chocolate Cookies

Reviewed: Feb. 22, 2009
I will be making these again! They are a nice change from your typical chocolate chip. I made them exactly as stated in the recipe, which yielded 3 dozen exactly. The texture was perfect--not too hard or soft (I find the cookies made with the recipe on the back of Reese's PB Chips come out too soft and they fall apart) My husband and children loved these and they were gone within 48 hours (alright, I had a few too!) :) Thanks for the recipe!

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Feb. 6, 2009
Loved this recipe, as it is so versatile. I made it for a birthday party and it was a hit! I used store-bought cinnamon pita chips and used frozen raspberries as well as added cantaloupe. For lunch the next day, II added the leftover salsa to plain yogurt and it was delicious!

Banana Crumb Muffins

Excellent! I love how light these muffins are, and the topping adds a little extra treat. I added chopped nuts and next time, I will probably add a little cinnamon to the batter. This is a great recipe!

Good Old Fashioned Pancakes

Reviewed: Dec. 28, 2008
Excellent pancake recipe. I added a few extra tablespoons of milk because I like my batter a little thinner. Next time, I think that I will add a little vanilla as others have suggested. The base batter is wonderful and I can see adding in fruits, nuts, etc. in the future. The pancakes were light and fluffy. My boys loved them!
