Across the Border Tequila Shrimp

This is an absolute winner. One of my guests joked that he wanted to lick the bowl! Instead of reducing the sauce (and letting the shrimp get cold) I quickly whisked some Wondra flour into the drippings. Delicious.

Mijo's Slow Cooker Shredded Beef

I used this one a big scale - I quadrupled the ingredients for 21 pounds of beef. Because it was for a crowd, I cut way back on the cayenne. The result was very flavorful without being too spicy. This is a very good recipe!!

Garlic Prime Rib

Although mine took a lot longer than the recipe said, it was absolutely delicious. The pan juices were amazing. Next year I will use this recipe again, but I think I'll keep it out at room temperature for longer before cooking. My probe thermometer registered 42° after sitting at room temperature for an hour and a half.

These were perfect. I made them as written, but put the mixture in a 13x9, not a 9x9. I'm glad I did. I was able to cut many marshmallows for cocoa. I am looking forward to making this with peppermint extract next. Great recipe!

Cheeseburger Soup I

I've been making a lot of soups lately, but the kids never seem to get too excited about them. This one was a hit though. With "Baking Powder Drop Biscuits" on the side, this makes for a nice weeknight meal on a cold winter day.

Of the drop biscuits I've made, this is by far the best. They were light, flavorful, and easy. I used half whole wheat flour, and that didn't even make them dense. This is a good one!

Playoff Meatballs

I really liked the texture of these meatballs - something I always struggle with. Because of the the reviews, I did a combo of cracker crumbs and oatmeal. I also didn't want to wash two pots, so I baked the meatballs for 20 minutes, drained them, then added the BBQ (mixed with chili sauce) and baked for another 25 minutes. VERY GOOD!

Cod with Italian Crumb Topping

This was very good! I liked the flavor of the crumb topping and appreciated the ease of not doing the whole breading operation. I also did the mayo/lemon juice as suggested by others.

Marshmallow Fondant

I enjoyed working with this recipe, and it was very tasty. However, I did have trouble lifting large sheets of it. It was quite pliable. Luckily, my project was supposed to look patched together, or else I'd have been crying. I'm sure more practice will improve my results, though!

I was thrilled with how fluffy these were! I made them as written, but will add a Tbsp. sugar and a little vanilla next time, as some suggested, for a little more flavor. This is my new pancake recipe!

Molly's Chicken

The sauce is nice, but I think the cooking time is probably too long. I cooked a combination of FROZEN boneless breasts and chicken legs for 7 hours and it was overcooked. My crock does not run hot, like the newer ones do. Other reviewers had success on high for three hours, so that may be the key. The kids liked the sauce though!

Never-Ever-Fail Meringue

Although this was good, there were a few things that left me wondering if I did it right, so that makes me think it isn't "never-ever fail". The direction to cook until thick and clear was up for question because I cooked and cooked and cooked it, but it still was cloudy. I'd call it clear-er, but was I supposed to wait until it was all the way clear? Then, when I cooled it completely it was too thick to fully incorporate into the egg foam, so it was slightly like the texture of tapioca. In the end, it held up well and didn't weep, but I have to say it was a bit off with that texture issue.

Grandma's Lemon Meringue Pie

Kielbasa and Cabbage

This was quite tasty. I kept wanting to add vinegar, since it just seemed like I should, but I didn't. While eating it I was glad I did not add the vinegar. The red pepper flake and the caraway made a flavorful combination. I forgot the sugar, and didn't think it needed it.

Harvest Sweet Potato Soup

This is delicious. Mine was quite thick, more like baby food, but I'm sure that was because my sweet potatoes were generous in size. I ended up using almost 6 cups of chicken broth to get it to soup consistency. I would recommend having more broth on hand in case it's needed at the end.

Scampi-Style Scallops Over Linguine

We really liked this, and found it to be a very nice, quick meal. Kids age 10, 7 and 4 all loved it. We all agreed that we would like it to have more sauce next time, so I will double that part. My pasta drank up all of the sauce, but it was so delicious, I don't blame that pasta! I made it as written, and didn't add the salt and pepper. I know many people will leave out the anchovies, but that is really the key to the flavor of this dish. I don't tell my kids about it until they are loving it!
