Chicken and Ham Casserole

I thought this was really yummy. I just used ham (trying to get rid of some leftovers). I added a little cheese to the "sauce" after it had thickened up (a little velveeta because that's what I had). Also added some seasoning to the white sauce (paprika, red pepper, black pepper). This was a hearty, comforting sort of casserole. Very good!

Sausage Casserole

Really delicious. I used left over ham because I didn't have sausage. We ate this for dinner - but would be an awesome breakfast casserole too. I used fresh shredded potatoes and prebaked the crust as suggested. I used 8 eggs instead of 6. I added some pepper, red pepper (just a dash). So tastey -- will make again!

Spaghetti Casserole III

Very good casserole. Used a jar of spaghetti sauce. I used mozzerella and parmesean cheeses but will try cheddar next time. A creative little take on plain old spaghetti night.

Danish Potato Soup

Really delicious! I followed the recipe pretty closely -- with a few changes. I used regular onion (didn't have green), omitted cabbage (didn't have any), I added red pepper (just a dash) and black pepper as seasoning. I used way more flour -- probably closer to 8 tablespoons and I wisked it with milk before adding then brought soup to a boil to thicken. I then added about a cup more milk (not cream) and I added cheddar cheese at the end! YUM! I also added the nutmeg directly to the pot instead of to the indivual bowls! EVERYBODY loved (even my 2 year old).

Skinny Scalloped Potatoes

Ok - these potatoes are to die for!! So delicious. I used a tsp. of dried basil and I used more cheese - proablly close to 2 cups. I know this made the recipe less "skinny" but so so good (just added some cheese in between the 2 "layers" and then added cheese to top at the end as recipe suggested). I also added a little more flour to the "sauce" part just to get it a little thicker. These came out perfect! Husband loved them! Thanks for the recipe!

Tacos in Pasta Shells

SOOOOO Delicious! Thanks for the great recipe! I did adapt a bit: I used 2 lbs. meat, 3 cloves minced garlic, 1 packet of taco seasoning, tsp. of chipolte chili powder, tsp. regular chili powder,pinch of salt, 4 oz. cream cheese. Put a little taco sauce on bottom of pan. Rolled meat in lasagna noodles, top with more sauce (need double what's called for). So so yummy with sour cream and olives!!

Slow Cooker Cranberry Roast

So delicious! I used PORK tenderloin (two of them to equal 3 lbs.) because I didn't like the thought of sweet beef. I usually don't even like pork - but this was so so good. It didn't take nearly 8 hours, probably more like 4-6 in my crockpot (on low). Serve with egg noodles or rice. Will make again!

Boilermaker Tailgate Chili

The best chili I've ever eaten!!! Used about four strips bacon - then sauteed all vegetables in grease (crumbled the bacon to add in). Used 3 cans chili beans in mild sauce (undrained) and that was plenty of beans. Everything else - follow recipe! The seasoning was perfect!

Italian Sausage Soup

So good!! Increased garlic, added an onion. Accidently used crushed tomato (28 oz). Broke some spaghetti up and added it -- worked great. Used frozen spinach. Can't mess this soup up! Will make again!

Chicken with Stuffing

This is really tastey. I followed the recipe exactly (except I seasoned my frozen chicken breasts with pepper, paprika and sage). Thought it turned out great!! I see that the stuffing could be a little soggy - but it reminded me of the stuffing that comes out of the turkey -- delicious!

Middle Eastern Rice with Black Beans and Chickpeas

I thought this was great! Used 1 can black beans and 2 cans chick peas -- liked that proportion! Used 2-3 TBL parsley - that was plenty. Out of cilantro -- will Definitely add that next time. Pine nuts - a must too!

Clark's Quiche

SO GOOD!! Made one of mine crustless when I ran out of pie crust -- turned out great! I used milk instead of half and half. I used 4 eggs and 3/4 cup egg beaters just to lighten it a bit! Turned out perfectly!

Oatmeal Cake III

Don't change a thing!! Being from the south, I had never even heard of this cake before! A friend from the midwest requested it, and it was a huge hit!! Definitely suggest sticking with the broiling - it caramelized everything perfectly! Thanks for the recipe.

Red Skinned Potato Salad

Such good potato salad -- and down here in the south, we're used to the good stuff! My husband said this was better than any restaurant -- and that is saying alot! I used onion - and not as much bacon. I also did 1/2 mayo and 1/2 sour cream - but I don't think that made that much difference.

Slow Cooker Italian Beef for Sandwiches

So delicious! Huge hit at our house. I used beef broth instead of water. Added sliced bell pepper with about an hour left. Definitely add the shredded meat back to the juice. And to make them super authentic - we dunked the entire sandwich - after it was assembled - into the juice! The messier the better!

Zesty Slow Cooker Chicken Barbecue

Great, EASY recipe. I used Balsamic vinegrette because I didn't have any italian dressing -- it came out great! And I ommitted the sugar this time. I've made it both with and without the sugar and I honestly can't tell the difference. It's really all about the BBQ sauce you use. Thanks.

Easy Banana Brownies

Absolutely delicious!! I added some extra 1/3 cup chocolate chips -- perfect! Definitely don't overbake them. I took them out after about 25 minutes - they were slightly underdone and gooey in the middle! RAVE reviews. Great texture!

Toll House Pie I

THis was a really great recipe! I halved the butter after reading reviews and I wish I hadn't! I think it would have been much better/richer with the full cup. I also think it needed a dash of salt. Oh - and I used a roll out refridgerator crust. It obviously would have been better with the home-made.
