Cottage Cheese Chicken Enchiladas
These were yummy! I substituted ground turkey for the chicken. I chopped orange bell peppers instead of green chiles and added a quarter can of zesty diced tomatoes to the meat mixture as the ground turkey tends to be dry. I'm not a fan of cottage cheese and was leery of this dish but was very pleased with the result and the creamy texture it lent. Definitely coat the bottom of the pan with the enchilada sauce and be sure to brush onto each roll so as not to dry out. I sprinkled the tops with fresh cilantro for added color and flavor and served with a side of spanish rice. Thanks for a delicious recipe!

Sloppy Joes II
I substituted ground turkey for the beef and it still turned out moist and delicious. My boyfriend, aptly named joe, said they were the best he'd ever tasted. Will become a regular recipe in this household. The only reason I didn't give it a five was because it tasted a bit "ketchupy", but yummmy nonetheless

Hawaiian Banana Nut Bread
LOVE LOVE LOVE it!! I wanted to make some type of banana bread for my one year old son who absolutely loves "nanas". I cut the sugar to 1 cup instead of 2 so he could have as much as he liked. (Couldn't tell the difference) His very picky non-fruit eating father loved it also. I didn't have cherries so I added about 1/4 cup of dried blueberries. Everyone loved this bread. This will definitely be a monthly repeat for my family! Thanks for the great recipe.
