Very good. Used 2 Tbsp olive oil instead of 1/2 cup margarine. 1/2 cup water seemed like too much.

Sweet Potato Corn Bread

This is a great corn bread recipe and a wonderful way to get my son to eat sweet potatoes. I halved the recipe and baked in a 9x9 for a little less time.

Polish Style Lasagna

This is kind of an unusual combo, but I like it. I added shredded cheddar to the potatoes as another reviewer suggested. I used real potatoes. I also used more onions for the topping as someone else suggested.

Sean's Falafel and Cucumber Sauce

I love these. I baked them at 425 for 20 min on one side and 8 min on the other as another reviewer suggested. I wouldn't like them as much without the sauce; I'm glad the falafel and sauce are both part of the recipe.

Acorn Squash Soup

This is a good soup. Next time I may use a little less chicken broth and sub plain water; I thought the chicken flavor overpowered a little. I didn't have onion or celery, but thought it was good without.

Simple Baked Apples

These aren't bad, but if I make it again I will use less cloves and sugar and omit the flour. The cloves were a little overpowering and it just didn't need that much sugar for my taste. The flour seemed completely useless; it just clumped up in little gummy blobs around the apples.

Apricot Carrot Bread

I love this recipe. Not too much sugar or fat. I use a combination of wheat flour, oat flour and flax seed instead of all white flour, and I use real eggs instead of substitutes. If you're looking for a really sweet carrot bread, this isn't for you, but I like it for what it is.

Classic Lasagna

This was pretty good. I think I might use more mozzarella next time and top with some more Parmesan. I used canned sauce and added zucchini, broccoli and cauliflower to the sauce.

Very good. I made lots of changes: I substituted applesauce for half of the oil and used half wheat and half white flour. I only used 1 1/2 cups sugar. Turned out great.

Applesauce Oatmeal Cake

I agree with the person who said that it tasted a little too much like baking powder. It still had a very good flavor, but I did sort of keep noticing the baking powder. I'm not sure what would happen if you used less though. I used half wheat flour.

Grilled Cabbage II

I didn't follow the recipe exactly. I didn't use peppers or onions and I only used half a cabbage. I cut the cabbage in wedges and then peeled the layers apart and put it in a zip lock bag. Then I melted the 1/4 cup of butter and put two cloves of minced garlic in the butter and poured it over the cabbage and shook the bag to coat it. Then I wrapped the cabbage in the foil and grilled 40 minutes. It was delicious!

Orange Oatmeal Cake

The flavor of this cake is very good, but it is crumbly which makes it hard to eat. I used cinnamon instead of ginger b/c another reviewer said they had and cinnamon sounded better to me than ginger.
