Sean's Falafel and Cucumber Sauce

I used garlic & onion powder instead of fresh, & dried parsley as well. It still turned out amazingly well. I cooked them in extra virgin olive oil.

Almond-Topped Fish

I followed the recipe to the letter except I used oregano in place of dill, and the mayo I used wasn't fat free. Great flavors, but the almonds made the dish for me.

Bread Machine Pizza Dough

Great recipe. The beer probably contributed to the amazing rise of this dough. I used Corona Extra. Nothing beats a fluffy yet crisp crust. 400 degrees & 20 minutes worked for me.

Goat Cheese Arugula Pizza - No Red Sauce!

A huge hit at recent party I hosted. Pefect in 20 minutes at 400f degrees. I also used spinach leaves in lieu of the arugula. My goat cheese was seasoned with rosemary.

Whole Wheat and Honey Pizza Dough

What a fun, quick & unique recipe! I agree with a few others that the sauce needs to be doubled, and I felt the need to add salt & pepper. Other than that, this was fantastic. I can't wait to try this with shrimp & chicken.

Mr. Head's Spicy Tuna Melt

WOW! I could eat the tuna all by itself. Amazing flavors! I also substituted the olive oil for the vegetable, and used "Smart Balance" instead of butter, but otherwise kept everything the same. Excellent!

Mediterranean Salmon

I loved the idea of adding diced tomatoes & chopped black olives, but I also added chopped capers & some caper juice, which went very well. I also used thyme & rosemary in place of the cilantro as suggested by another member. Great broiled, my three pieces were ready in 13 minutes. I recommend cover with foil during the last few minutes to prevent oven fires.

Red Snapper Livornese

I love the combination of garlic, tomatoes, capers & olives. Though I don't know if snapper's the best fish for this recipe. I have a similar recipe for swordfish, however, the fish is sauteed instead of baked. I also added the tomato juice & white wine as recommended by another member.

Skillet-Grilled Catfish

This was super impressive & easy to make. I didn't have cornmeal so I substituted corn starch & used extra virgin olive oil in lieu of butter. I also recommend squeezing a wedge of lemon over the fish after removing it from the skillet.

Blackened Salmon Fillets

Quick, simple & very tasty. The only change I made was brushing the fillets with extra virgin olive oil, although I did use a couple of teaspoons of butter on the skillet. Under high heat two minutes per side was plenty.

Firecracker Grilled Alaska Salmon

Very good recipe. I substituted olive oil in lieu of the peanut oil, and only had time to marinate the salmon for an hour, but it still came out great. I also sprinkled a little of "Emeril's Original Essence" for added flavor.
