Flan I
This was a bit more egg-y than I was looking for. I'm going to try some of the other recipes that call for more milk, less egg.

Sophie's Zucchini Bread
Terrific! To make it more healthy, I substitute 1 1/2 c. of quick oats for the equal amount of white flour, and for good measure stir in a few tablespoons of milled flax seed. I've also replaced some of the zucchini with shredded carrots, and used applesauce instead of oil. I always cut the sugar to one cup. Delicious and versatile. My 2-year-old eats it up!

Lemon Pound Cake III
I've made this twice; once I didn't have enough sour cream on hand, so I used some cream cheese as well, and the second time I didn't have *any* sour cream, so I reduced the sugar to 1 cup and used condensed milk in place of the cream. Delicious both times. I serve with fresh berries and whipped cream for dessert, or plain with coffee.
