Coconut Cream Cake II
My book club group always request this cake when it is my turn to host! My modifications: I make it 3 layers, baked for 25 minutes. I add 1 tsp of coconut extract to the cake mix and to the frosting. The 3 layers require 1 1/2 times the recipe and I always add extra coconut right into the frosting and pat more on the outside of this cake.

Spinach Salad Supreme
My family loved this recipe. I made the dressing early in the day and included the onion and green pepper chopped fine. I used 1/2 olive oil & 1/2 vegetable oil, added an extra teaspoon of both sugar and ketchup. I think letting it sit for a few hours helped the flavors of the dressing. Yummy!

Old Fashioned Potato Salad
This was very good. I used Yukon Gold potatoes, they are firm and hold their shape. I increased the Mayo to 1/3 cup and added 2 Tablespoons of heavy cream to the sauce. I will make this one again.
