About this Cook
Cooking was never a big thing in my household growing up. We ate out about 4 times a week. A home cooked meal consisted of a box of hamburger helper and a can of green beans. When I married my husband, I knew how to boil water and....well.... that was about it. Bless his heart, he's been very patient with me while I learn the art of cooking. We now have two little boys and cooking has become even more important to me. I want to be able to provide my family with something that I never had, a home cooked meal at the table, surrounded by the ones you love.

Anything quick and easy. Love desserts. I have a HORRIBLE sweet tooth. Cookies, Cakes, Candies.... mmmm yummy.

Easy Apple Crisp
MOUTH WATERING! This was the BEST apple crisp, ever. I did use some of the reviewers suggestions and added two extra apples, 2/3 cup of APPLE JUICE, not water. sprinkled the apples with nutmeg, allspice and cinnamon. Drizzled the apples with caramel ice cream topping. Reduced the sugar to 1/2 cup (with the apple juice and the caramel I probably could have reduced it to 1/3 or 1/4). baked it for about 45 min. Delish!

Cheesy Zucchini Casserole I
FABULOUS!! I loved this, hubby loved this, 18 month old loved this! Used some of the reviews to make this wonderful base recipe even better... used bottled minced garlic (2 tsp, we love garlic) an extra slice of bread, about a half cup more zucchini, 2 eggs, and I accidentally melted a half cup of butter, so I was naughty and added the whole thing :). I put 1/3 of the cheese mixed in the casserole sprinkled the rest on top. I added some Lawerys seasoning as well. Put in a 8x8 pan and cooked 20 minutes covered, 20 minutes uncovered. Perfection!

Honey Baked Chicken II
FABULOUS! Made this with two large boneless, skinless chicken breast, cut into strips. Still used the same amount of butter in the sauce. Used spicy brown mustard. Also added (as per others suggestions)1/8 tsp cayenne pepper, one clove garlic and about 1/4 cup onions, thinly sliced. Baked 350, covered for 30 min. Then turned it up to about 410, uncovered and they were finished in 25 min. The extra sauce was great over some steamed white rice. Wonderful recipe.
