About this Cook
I am learning to eat and cook for my family while adjusting to my weird, special diet requirements. I love cooking and baking. My newest hobby is making cup cakes, not just plain ol' cup cakes, but beautiful cuppies! Things that should be in display. I do other things than chain myself to the stove, I am actually going to school for construction management and a teaching degree, and I am an aspiring ceramic artist.
My favorite things to cook
Dinner for my family, nothing is more satisfying when they ask is there any left, or can you do that one again. We do lots of red meats, as a part of my weird diet requirements. But no one seems to mind. I'm quickly learning to love to make bread with spelt and not regular flour.
My favorite family cooking traditions
My father is German so a lot of northern German specialties and secret family recipes that only my dog knows :) and my mom really just has random recipes that keep getting passed down from the ladies in the family. Once a month we make what my father's mother made for Sunday breakfast, Keiserschmairn. (I'm 99% sure that is the spelling) Which is pancake batter and dried fruit pan-fried and served with applesauce, simple and good.
My cooking triumphs
I made my first set of cuppies, they were yummy, I'm no longer afraid to do that again. And we have a vegggie garden now so everything I make has veggies in it, even if you don't think that cookies should have a veggie in 'em.
My cooking tragedies
I have too many to list ask me some time about RICE BREAD!!! And a recent funny disaster. I over cooked some chocolate cupcakes and took them to work without trying them. Well one of the guys asked for one I told him which tray to take one from well he didn't listen. He took the cake to the truck and proceeded to eat it, it broke one of his crowns. He didn't swallow it until later in the day when he put it back in and ate lunch. Funniest story on this job-site yet.

Tomato Brie Bow Tie Pasta
I LOVE THIS RECIPE!! Its a fast pleaser. My mom hates brie but eats this pasta without a complaint. I have to sub goat brie for the real thing but its still just as great and no one knows if I don't say anything. And I have to add a meat, normally chicken breasts, cause if I don't dad has a cow. Strawberry Pretzel Salad
hahahahaha I have to laugh this is the same receipe my family uses every year and for every family get-together. Only one change the name, we call it "stupid" pretzel salad, for reasons only known to the women in my mom's family.

Best Moist Chocolate Cake
I decided to make these for the 4th of July party my parents do every year, and they were a hit. I made too many and took the rest to work, the guys had no problem devouring them. I did make some changes to better suit my dietary needs. I subbed out all the butter of olive oil, 1/2 cup sugar and a half honey, 1-1/2 cup rice milk, and 2-1/2 cups white spelt flour, and only 1/4 tsp of salt, I think my "helper" might have dumped another 1/2 cup of sugar in when I wasn't looking, they are sneaky little men :) wink wink
