I live alone. It's hard to cook for 1 person. Stews, spaghetti w/meat sauce, casseroles, pancakes, waffles, macaroni and cheese, beefmac, beans, Spanish rice and more. In New Mexico, people eat a lot of Mexican food. I can cook enchiladas, green chile stew, burritos. Don't eat too much of it because it gives me heartburn. My favorite things to cook are my triumphs. Mostly baking is my downfall, because I leave the kitchen and forget something is in the oven.
