About this Cook
Single mom with a 12 year old and 15 year old. My oldest wants to be a chef and is my greatest critic. Same thing every night.. "what's for dinner? Is it going to taste good?" It usually does. I wish I had more time to spend in the kitchen, I love experimenting and most things I make I have no recipe for. We're trying to eat "clean" now (much to the kids dismay) so we're trying all sorts of new veggies and new ways to prepare things. So far, so good. Have a small vegetable and herb garden planted and I enjoy using things I've grown. Going to do the CSA farm thing next year and get in on the local veggies and fruits.
My favorite things to cook
Chicken marsala with zucchini, eggplant and mozzerella, fettucini alfredo, shrimp scampi, and anything Central American. My kids LOVE my beef stroganoff and my friends would come over for enchiladas every day if I'd let them. I love cooking things that make the entire house smell great! Mmm... chocolate chip cookies.
My favorite family cooking traditions
Christmas cookies, my grandma's Texas Sheet cake and a no-name casserole that is a heart attack in corningware, but it's SOOOOOO good.

My cooking tragedies
In 2004, I tried chili with tofu when I went on a healthy eating kick. It was ugly. There were casualties. I've never lived it down. Every time I serve something new, they say "there's no tofu in it, right?" And no. No tofu. Ever. Pass the meat, please.

Butterscotch Oatmeal
This is my kids' new favorite for weekend breakfasts. Seems a little decadent for the most important meal of the day, but man, it's GOOD! :)

Key Lime Pie VII
SOO GOOD! I used a regular pre-baked pie crust (personal preference) and this pie turned out perfectly. Thank you!

Champagne Sorbet with Berry Medley
I can't rate this EXACT recipe, because I did modify it a bit. I pureed about 2 cups of mixed berries (strawberry, blueberry, blackberry and raspberry) and added to the champagne mixture as well as 1/4cup more sugar. It turned out great!!! The champagne keeps the sorbet at the perfect consistency, and the berries kept the sorbet from tasting overwhelmingly like champagne. We served this in martini glass with a sprig of mint and lemon zest. Very pretty presentation, refreshing and delicious! Thank you for sharing!
