About this Cook
I just recenlty moved back to Maui with my Coastie. I'm STOKED because there is such amazing produce and fish here. We've been very fortunate in our travels, including our 50 day trip across the U.S. in our van. Before that we did voluntary organic farming in Maui, The Big Island, Kauai, and Costa Rica. My favorite part of it all was going out to the gardens I grew and using the delicious veggies, fruits, and herbs to make diverse dishes, (depending on where I was at the time!).
My favorite things to cook
Oh geez... I like exploring, but I'm not big into red meats and I like to use organic ingredients. Sugar cravings make me go on a dessert exploration which I try to use honey or agave as a sweetner. I love to cook foods from different cultures, from sushi to curry to baked beans!
My favorite family cooking traditions
My Grandma's Graham Cracker Pie!!! I have a huge family,(that loves to cook), so Thanksgiving, Christmas, and Easter involve over 20 people and a ton of great food!
My cooking triumphs
Mastering Grandma's Pie... (My Dad and Uncle's think I'm a saint!). Cold linguina pasta, (Dad begs me to make it everytime I visit!). Baked beans, cheesecake, yellow curry, peanut butter & chocolate chip cookies, eggplant parmesan, pizza, sushi, mango banana bread, quesadillas, grilled portobello burgers... thankfully, most meals are triumphs! :)
My cooking tragedies
I'm actually going to go with my guys cooking tragedy.. :p He never cooks, because I spoil him rotten. One night I worked late, so he decided he would make us dinner. That consisted of rotini noodles topped with "canned" spaghetti sauce, and a can of tuna! GROSS!!! I tried to eat it to be nice, but we both agreed it wasn't worth trying to stomach.

Bacon Cheddar Jalapeno Poppers
Let's see... bacon and cheese... I think that combo would make anything 5 stars! This was no exception, it was delicious! I am overwhelmed with jalapenos in my garden right now, so it was a great way to use up my abundance. Also, unless you want "soft" bacon, cook it a little bit before hand. I like mine with a little crunch!

Zucchini in Sour Cream Sauce
I'm typically a 5 star girl, because I can normally tell if I'm going to love something by the ingredients. This did get eaten up, but had I not seasoned it at the end, I'm pretty sure it would have sat. The onion is basically a waste unless you double or triple it. I couldn't even taste it in the sauce. I added in garlic salt and black pepper to pump it up a bit. Great texture, (used yellow squash too), good taste, but not an amazing recipe.

Portobello Penne Pasta Casserole
I followed the recipe exactly, (perhaps just less spinach), and WOO-HOO was it good! I don't normally cook with butter or milk, (we're kind of health nuts), but we were having company so I thought I'd spare them from our typical ways. LOVED IT! Some people said it looks gross, but when you bake the cheese on top, I think it really looks great! I sprinkled parm on top at the end for presentation as well.
