About this Cook
I just recenlty moved back to Maui with my Coastie. I'm STOKED because there is such amazing produce and fish here. We've been very fortunate in our travels, including our 50 day trip across the U.S. in our van. Before that we did voluntary organic farming in Maui, The Big Island, Kauai, and Costa Rica. My favorite part of it all was going out to the gardens I grew and using the delicious veggies, fruits, and herbs to make diverse dishes, (depending on where I was at the time!).
My favorite things to cook
Oh geez... I like exploring, but I'm not big into red meats and I like to use organic ingredients. Sugar cravings make me go on a dessert exploration which I try to use honey or agave as a sweetner. I love to cook foods from different cultures, from sushi to curry to baked beans!
My favorite family cooking traditions
My Grandma's Graham Cracker Pie!!! I have a huge family,(that loves to cook), so Thanksgiving, Christmas, and Easter involve over 20 people and a ton of great food!
My cooking triumphs
Mastering Grandma's Pie... (My Dad and Uncle's think I'm a saint!). Cold linguina pasta, (Dad begs me to make it everytime I visit!). Baked beans, cheesecake, yellow curry, peanut butter & chocolate chip cookies, eggplant parmesan, pizza, sushi, mango banana bread, quesadillas, grilled portobello burgers... thankfully, most meals are triumphs! :)
My cooking tragedies
I'm actually going to go with my guys cooking tragedy.. :p He never cooks, because I spoil him rotten. One night I worked late, so he decided he would make us dinner. That consisted of rotini noodles topped with "canned" spaghetti sauce, and a can of tuna! GROSS!!! I tried to eat it to be nice, but we both agreed it wasn't worth trying to stomach.

Connie's Zucchini 'Crab' Cakes
AWESOME! Followed recipe exact except no butter, used o.o. instead and extra old bay! SO GOOD and they stayed together and browned beautifully!

Pasta Primavera with Italian Turkey Sausage
Served this over leftover rice instead of noodles, and added in cabbage and greens from the garden, as well as tomatoe sauce since I didn't have any fresh maters, (which made it saucy and extra delish!). I think almost all veggies could go in this... It is an EXCELLENT base! For summertime freshness and use of the garden and INCREDIBLE TASTE, this gets 5+ stars in my book!

Banana Muffins II
Followed the recipe almost to the t... except that we always use olive oil instead of butters or shortenings, and I always use an extra naner. :) The muffins turned out wonderfully!
