About this Cook
Even though I have been cooking for 20+ years, I consider myself a beginner because only recently have I begun to take an interest in cooking, researching recipes, baking, trying new things, etc. All these years I have mostly cooked using simple side dishes, broiling or baking chicken and beef without any other preparation besides common seasonings. I have suddenly become interested in exploring recipes. Honestly, all these years I was just afraid to try new things! Crazy isn' it?
My favorite things to cook
I enjoy cooking for Thanksgiving, baking Christmas cookies, finding new ways with chicken and beef and trying out new desserts. I also want to try more Mexican dishes since Mexican is one of my favorite foods.
My favorite family cooking traditions
I am Italian and I do make a good lasagna and spaghetti and meatballs.
My cooking triumphs
Finding this website! It is the best cooking website yet! However, one of the better things i tried and was sucessful at was a brisket recipe from Emeril for Passover. I am not Jewish, but my new (married 4 yrs.) husband is and I did not even know what brisket was...it was delicious and everyone ate every bit of it!
My cooking tragedies
All the years that I spent cooking very plainly and without passion. Now that I am older and family times have become even more important to me, I find that i totally enjoy cooking for my family even more, and what could be better than the combination of food and family enjoying a meal together?

Kyle's Favorite Beef Stew
I apologize as I didn't make the recipe exactly since I made this spur of the moment. I made with all the ingredients except wine and mushrooms, which I think would make this even better. Also, I didn't have time for crock pot cooking so I just made it on the stove. I did brown the meat as stated and removed from pot and then sauteed the onions and garlic in butter. Then I added the browned meat and the rest of the ingredients back into the pot to cook for about 4 hours. I have to say this was truly delicious. Everyone at my house (1 hubby, 2 sons, 1 friend) loved it. I can't wait to try with the wine and mushrooms.

Roast Sticky Chicken-Rotisserie Style
This really is good - even the hubby who is not big on chicken said how good. It was easy too. I took a tip from a previous recipe I made from this site for roast beef and mixed the olive oil with all the spices. Let it sit for 10 mins. and then rubbed all over the bird. Very good and will definitely make it again. In fact, I purchased two birds and made them in my biggest roasting pan so that we had one chicken one night, and the next night, when I wasn't going to be home, my hubby and boys heated up the 2nd bird.

Spicy Rapid Roast Chicken
I made this tonight and it was very good. For ease, I mixed together all the spices with the olive oil, let it set for 10 minutes and then rubbed it all over the chicken, even inside the cavity. I cooked exactly as stated and it turned out beautifully. I will definitely make this again.
