I'm in my mid twenties and I have a 5 yr old daughter and a wonderful bf. I absolutely love to cook for my family because it makes me feel good when they eat healthy, yummy meals. We also love to eat and we aren't too picky!
My favorite things to cook
Cooking is hands-down my new favorite hobby. I'm always searching for new recipes to try. I enjoy cooking hearty, healthy foods using fresh ingredients. I've been cooking a new homemade soup each week. I also like to use the slow cooker during the colder months. I love making Mexican Lasagna and Southwestern Vegetarian Pasta from this site. I also love baking homemade cookies, pies, and cornbread.
My favorite family cooking traditions
I'll always have fond memories of making homemade gnocchi with my dad's family. Soooo delicious, not to mention fun!

My cooking tragedies
When I first started cooking when my daughter was a baby, I managed to ruin pasta (!) and had a tendency to overcook meat. I'm pleased to say that I no longer make those mistakes. My bf says he loves everything I cook or bake for him.

Sweet Potato Pie I
I baked this pie for Thanksgiving and it was absolutely delicious!. I boiled two larger sweet potatoes, instead of just one. I used the mixer on it's highest speed to "mash" the sweet potatoes before adding the butter. I used 1/2 c of light brown sugar and 1/2 c white sugar. I added a squirt of lemon juice and 1/4 t each of cloves, nutmeg, and ginger. I completely forgot the cinnamon, but nobody could tell. Instead of milk, I used evaporated milk instead. When filling the pie, I didn't use all of the mix because I thought it would be too much. I baked the pie for 55 mins and it was perfect! I served it the next day topped with a dollop of whipped topping :)

Grilled Lemon Herb Pork Chops
These pork chops are so tender and tasty. I like to use bone-in pork chops and broil them, since I don't have a grill. My bf always asks for seconds!

Country Pumpkin Muffins
These muffins are so flavorful! I baked these for my 5 yr old's kindergarten class, so I omitted the raisins and walnuts and they still turned out great. I made a few changes: I used a whole 15 oz can of pumpkin and 1/4 cup of milk instead of the water. I love baking these muffins, the kitchen smells amazing!
