Iced Pumpkin Cookies
These were great!! Moist and great tasting! I am a bit lazy and didn't use the glaze but instead put about a 1/4 of a bag of mini semi sweet morsels. Fantastic!!

Stuffed Eggplant Parmesan
This was great... I made a few subs... Instead of mozz cheese I used shredded provolone which added some sharp, great flavor! I also cooked longer to make the shells tender and tasting great. I also added some ground turkey and spinach to the mix. Awesome!! By the way...I didn't even use the bread crumbs and it was still awesome!

Downeast Maine Pumpkin Bread
I have made this bread "ingredients as is" many times and people were begging for more. People say you shouldn't mess with a good thing but I did take some suggestions and it still came out great with slightly less calories. Instead of 3 cups white sugar I did 1c white and 1c brown. Instead of 1c oil I used 1/2c oil 1/2 applesauce. Instead of 3 1/2c flour I used 2c whole wheat flour and 1 1/2c white flour. I also baked them in mini loaves (only 30 mins to cook) and sprinkled chocolate chips on top... yum!! My husband couldn't tell the difference ;) Even eliminating a full cup of sugar still kept it tasting awesome!
