Stuffed Eggplant Parmesan
This was great... I made a few subs...
Instead of mozz cheese I used shredded provolone which added some sharp, great flavor! I also cooked longer to make the shells tender and tasting great. I also added some ground turkey and spinach to the mix. Awesome!! By the way...I didn't even use the bread crumbs and it was still awesome!
