Mexican Tinga
Very good. Use one or two chipotles and a little adobo sauce. I used half of a whole boiled chicken I had left over. Definitely put refried beans on the tostadas. I accompanied this with a salad with a garlic, lemon & olive oil dressing.

Asian Salad
OH EM GEE is this good. Seriously, don't think about it, just make this salad. I only used one thing of Top Ramen package because I forgot to buy two and it turned out wonderfully. Plus it cut the fat down and that's a bonus.

Chuck's Favorite Mac and Cheese
Use Ricotta instead of cottage cheese, it's much better. My "chef" sister in law requested this recipe, I was so surprised!
