Awesome Baked Sea Scallops
I will not make this recipe again, as I thought it kind of bland. Also, the bread crumbs only got crispy on the very top, and were mushy where they were in contact with the scallops. I tried to cook it longer so they cooked more, and it was less runny, but then the scallops began to get rubbery.

Spinach and Tortellini Salad
Delicious, and I don't even like spinach! I omitted the black olives because my husband does not care for them. Also, fresh spinach is healthier than frozen, so I used that. It is best to make it a couple of hours ahead of time so the spinach soaks up some of the dressing!
