I am a single mom living in beautiful San Diego! I am currently attending The Art Institute of California - Culinary Program. I am working towards my B.A. in Culinary Management. My favorite pastimes are reading and cooking. I could do either one for days on end and never get bored.
My favorite things to cook
I love to bake anything. I love making cakes, pastries and candies.
My cooking triumphs
I know I have completed a masterpiece when my 6 year old son loves my food. To put that into perspective I need to explain my son's gastronomical tastes. He is a picky eater. Not in the usual kid picky way. He is a connoisseur. Only the best will do. He can tell a cheap bleu cheese from a great one. His salads can never be made from iceberg lettuce. He can't stand baloney. His school offers a salad bar for lunch. He is constantly complaining because the only offer lettuce, limp olives and ranch. He wants tons of veggies, all of the time. A meal is not complete without a vegetable. I have created a monster! :)

Broiled Tilapia Parmesan
Wow! I popped this in the broiler and had dinner on the table in 20 min. A favorite for nights when my son has Tae Kwan Do until 8 p.m. The only thing I didn't like was the amount of lemon. It came out to tart for our tastes. I reduced it to one Tbls.

Peanut Butter Easter Eggs
I made this recipe according to the recipe and they turned out great. My only complaint was that they were difficult to form because of how dry they turned out. I made another batch with a few modifications. I added an extra cup of peanut butter and enough milk to bring the mixture to the desired thickness. I also added a Tbls. of vanilla. The extra peanut butter and milk made creamy peanut butter eggs, everyone at work raved about these!

Easy Chocolate Truffles
I thought this recipe was fantastic! I made the chocolate in the morning and let it sit in the fridge untill later that night. It worked great and tasted wonderful. I shaped the truffles into mini eggs and coated them in a lot of powdered sugar (you couldn't see any brown) They looked like mini eggs. Everyone loved them.
