Banana Crumb Muffins

These are really easy and really the best muffin/bread recipe I have ever tried. Fresh tasting with a wonderful banana flavor. Super moist! Also, not too bad healthy wise either. It's more banana than flour!

Strawberry Jam

Excellent! I only had half the amount of fruit called for so I made a half batch. I can taste the lemon too, but I don't mind it. Almost as good as my moms! I would make this again. It really is simple and well worth the time involved. I used a digital thermometer to get to 220. It took a lot longer than I thought it would, so be patient. These preserves are wonderful on hot biscuits with warm butter. YUMMY! !!!UPDATE!!! First, the lemon flavor was gone by the next day. It set perfectly! And is nearly all gone in just a couple days. I just used the same basic recipe for cherry jam. Worked great and is DELISH!!! THANKS AGAIN!!!

Olivia's Applesauce Cake

I made this cake yesterday because I like a less spicy applesauce cake. I was, in fact, making two of these. One was for a grieving family and one was for home. I only had time to make one and I'm glad. I tried ours last night and I will not be making this again today or ever again. There NOTHING wrong with the cake, it's just very bland. I do like the texture of the cake, but there just isn't anything special about it. I would think if you wanted to add a good cream cheese frosting to it, that would help. Or even a lemon icing drizzled over would be good, but the cake just isn't interesting.

Buttercream Icing

So easy and sooooo good! Easy to work with too. I have used this recipe many times and it always gets compliments. Takes color very well and holds it's shape. I used this icing in a bag to decorate a pink pig with "stars" to make it look prickly. Three days and the cake is getting stale BUT this icing is still the best part! It does have a bite of sugary grit to it as some reviewers have said, but that's what buttercream frostings are about. If you want smooth icing, dump some sweetener in whipped topping and enjoy. But if you want ICING, try this one! NOT too sweet, NOT too buttery. Not possible! Just good old fashion buttercream icing-incredible!

Pineapple Cinnamon Stuffed Acorn Squash

This really is not very good even altering the amounts of seasonings. I LOVE squash with these spices and I love pineapple so why not. I really will not make this again. It just didn't work together.

Oven Fries

These are really great! Was looking for an alternative to deep frying potatoes for fish and chips. This really hit the spot! I did the shake and bake in a bag trick, but next time I don't think I'll season that way. I think it would be better to season on the pan so you can control better. I look forward to trying these with other seasonings. My husband suggested old bay and I was thinking tex-mex or even with bacon then dipping in sour cream. YUMMY! Thanks for the great recipes! I'll be using it a lot!

Really Rich Banana Bread

This bread is really very very good. Totally YUMMY! In fact, I will probably call this my all time favorite banana bread! The texture is more fine than most quick breads. In fact, this has more of a light muffin quality about it. It also reminds me of pound cake. Light and refreshing. It makes this more of a spring bread than heavy fall or winter quick bread. Very pleasant indeed! I did do a couple things different. I used 5 eggs and 4 bananas. I'm trying to get rid of 2 bunches. I used cinnamon in place of nutmeg too. And I threw in a handful of raisins. I would also recommend you watch the baking time. Check yours at 70 minutes to be sure. Mine was a little over baked at 80. Thank you for sharing this recipe!

Cream Cheese and Ham Spread

Not only is this spread easy, it's really good too! It was one of the appetizers I served at my daughters tea party. Kids and adults both loved it! We had it on crackers with and without cheese. Excellent both ways. It's hard to imagine something this simple could be this good! I will make this again.

Sylvia's Ribs

These are the most amazing ribs! I will never make ribs any other way again. The ribs are so tender and deeeelish! And that sauce!!! To die for!!! I make it and dip pretzels in it while it's still hot. UMMMM-UMMMMM! Makes my mouth water! This one is a keeper and thank you Sylvia!

Zucchini Chocolate Orange Cake

Very moist cake. Chocolaty without being overpowering. A nice texture, but not cake like. I don't taste the orange in the cake at all. But neither do I taste the zucs either. :) My 8 year old thought it was really good! Easy to make and really yummy! Yes, I'd make it again. THANKS!
