The first time I ever cooked red beans and rice i over spiced them to the point that the water turned a bright dangerous red color. I was about 13 at the time.

Zucchini and Potato Bake
This was great! Very simple and very delicious. I added a largely chopped sweet onion, and used chili powder because I didn't have paprika. I usually don't enjoy vegetables, but found myself returning to the pan and snacking on chunks all night. It was even good as cold leftovers the next day.

Stuffed Peppers My Way
I used 1/4 a yellow onion instead of green, and I added about 1/3 cup of tomato sauce. This was very delicious!

Sassy Spaghetti
To begin, I should have used much less pasta. After adding a can of tomato sauce and tons more seasonings, it reminded me of my mothers very bland, very dry spaghetti (which she always served with corn!). It was simple and tastey enough, though. I'll probably try it again with less pasta.
