Savory Sweet Potato Salad
Cooking the potatoes to the correct doneness is key in this recipe. If my potatoes had cooked any longer, I think the consistency and texture would have been too mushy and not the hit it was. This was a great alternative to regular potato salad and everyone was quite surprised to find they liked it more than they expected. I made everyone try it and 90 % of them liked it alot. I used 1/2 real mayo and 1/2 salad dressing and orange,red and green peppers for color. I will definitely use this recipe again...maybe at Thanksgiving for a switch from traditional sweet potatoes, although it certainly is not just a holiday salad!

Omelet in a Mug
I am giving this a 5 for it being a quick and simple breakfast and fasy & easy cleanup! I love that it can be adapted to what you like or have on hand! I would give it a 4 or 4 1/2 on taste since I don't really care for microwaved eggs they seem a bit rubbery sometimes.

Sloppy Joe Sandwiches
This recipe was really quick and easy and I couldn't believe I had all the ingredients on hand! I will definitely use it again. I had to triple it for my family. I also adapted it (of course) by adding yellow onion to the beef & omitting the onion powder, using 2/3 tomato sauce and 1/3 ketchup instead of ketchup only and omitted the water, which allowed me to simmer the full 30 minutes. I also added fresh cracked black pepper to each layer and a dash of Franks Hot sauce (okay, maybe 2 dashes, but it could've used 3). I mixed all the sauce ingredients together and tasted it then altered with a little more mustard and an extra splash of Worchestershire sauce prior to mixing it with the beef. My initial measurements MAY have been a little off too since I am not big on EXACT measurements. Next time I will throw in some diced up green pepper with the beef. Family agreed that it needs it, but it was still good. Will keep this one in my recipe box!
