Bread Pudding II

Reviewed: Jul. 26, 2009
DELICIOUS!!!! This was very very easy to make and came out perfect! I left out the raisins simply because I didnt have any on hand but definitely didnt miss them in the finished product. I also used heavy whipping cream instead of milk and added a bit of brown sugar in to the egg mixture! YUMMY! Will definitely make again and again!

Szechwan Shrimp

Reviewed: Oct. 16, 2008
WOW!! This was sooooo DELICIOUS!! I would not have thought to mix these ingredients together to make a sauce but it really was good! I did double the ginger to give it a more authentic chinese restaurant taste! I sauteed white onions, bell pepper, and minced garlic first. Then added some frozen stir-fry vegetables that I steamed in the microwave. I also used RAW shrimp (as suggested by another reviewer because i feared if they were pre-cooked they would turn out tough) SO GLAD I DID!! Anyway I then followed the recipe as written, cooking until the shrimp were pink and tender (about 5 minutes) It was great! Even my VERY picky boyfriend asked for seconds!!! I will defintely be keeping this recipe on hand!

Spanish Rice II

Reviewed: Oct. 13, 2008
Very good!!! VERY Authentic!!! Keep a close watch on the rice while it is browning- it can and will burn very quickly if you dont!!! I also used chicken broth instead of water and salsa instead of canned tomatoes for some added flavor!!! Highly recommended! I left mine on medium heat, covered, and simmered for exactly 30 min. PERFECT!!

Taco Lasagna

Reviewed: Oct. 13, 2008
YUMMY!!!! This was a nice twist to traditional italian lasagna. I took the suggestion of another reviewer and did mine in a round pan so that I only needed 1 tortilla per layer. But make sure your pan is deep enough or otherwise use two pans. I used flour tortillas instead of corn simply because my family isnt a fan of the corn ones. I also blended two heaping tablespoons of cream cheese into the sour cream to add a bit of sweetness to the dish!! And of course top it with tons of cheese!! DELICIOUS!!! Also a good dish to assemble ahead and freeze for a super quick dinner on another night!

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Sep. 23, 2008
Delicious! I used strawberries, granny smith appels, peaches, kiwi, and green seedless grapes- all fresh. Chopping all the fruit of course was a bit tedious but dont be discouraged- it was well worth the effort. I didnt any any perserves- it was fine without it. I ended up not putting any sugar on the tortillas before baking them because I realized after the first batch that the combination of sweet fruit and sweet chips was just a bit too much. Just a personal preference I think. But overall very good.

Apple Crisp IV

Reviewed: Sep. 23, 2008
YUMMY!! This was delicious! I ended up using 4 granny smith apples and making a bit more of the crumb mixture (as I didnt feel as if I had enough) I also used half white sugar and half brown sugar just to vary the sweetness and I took the advice of another reviewer and tossed the apples in some additional cinnamon-sugar before placing them in the dish. I also added a bit of milk to the bottom layer of the crumb mixture because I feared the crisp would be too dry without it. Turned out GREAT! The bottom was nice and chewy, the apples were sweet but still tart, and the top was crispy and golden brown. Will definitely make again.

Marie's Easy Slow Cooker Pot Roast

Reviewed: Sep. 19, 2008
THE BEST EVER!!!!!! The meat was so ridiculously tender!!! It literally melted in your mouth! I did marinate my meat overnight(in italian dressing) and I also took the advice of previous reviewers with a few other changes: dissolve 2 beef boullion cubes in the water before adding it in (you could use 1 can of beef broth for the same result), and add 3 cloves of garlic, chopped as well. I also added 1 tsp cayenne pepper to give it some kick. When it was done, I could barely keep my boyfriend out of the pot long enough to actually serve it up! Oh I can't say enough about this roast- it was THAT good! I will be reusing this recipe many many more times. Thanks sooo much Marie!

It's Chili by George!!

Reviewed: Sep. 19, 2008
DELICIOUS!!!! Such an amazing flavor combination. I did make a few changes to mine though 1)add 2 fresh diced tomatoes 2)used 3 beef boullions dissolved in 2 cups water instead of tomato juice 3)add 2 tablespoons barbecue sauce, 4 tablespoons ketchup, and 1 tablespoon worschestire sauce 4)add 3 cloves garlic, chopped 5)used 1 can chili beans in spicy sauce instead of pintos 6)use 1 tsp brown sugar instead of white sugar 7)add 1/4 cup real bacon bits..... I ended up using 1 pound fresh ground beef with 3 large leftover hamburger patties (from dinner I cooked the night before) that I crumbled up. I combined everything (except the fresh meat) in the crock pot the night before and let it sit in the fridge til morning. Woke up and browned the fresh meat and then added it to the pot and let it cook on low for about 10 hours. Came home and was BLOWN AWAY by the aroma alone. Smelled soooo good! This was my first time making home made chili and I got so many compliments from my guests. Served with shredded cheddar, sour cream, and cornbread as a side! YUM! You can really alter it to your own personal taste but this was a good base. Will definitely be making again!

Restaurant Style Egg Drop Soup

Reviewed: Sep. 15, 2008
THIS WAS EXCELLENT!!! I had the hardest time convincing my boyfriend [an avid coniseur of Chen's Chines Restaurant] that this was homemade!! Honestly. I didnt add any cornstarch to mine as I like the broth texture by itself. I seasoned it with garlic powder and some red pepper flakes to add a little kick. And I also cooked chopped fresh mushrooms in with the green onions. SO SIMPLE but SOOO GOOD!! Will be making again and again.

Cheddar Bacon Hamburgers

Reviewed: Sep. 15, 2008
VERY GOOD!! Very moist and flavorful. I mixed in onion, bell pepeer, bacon, mushroom, shredded mozzarella and garlic into the patties and then grilled them on the george foreman. I did also follow other readers reviews and mix in one egg with the meat to hold it together. DELICIOUS!!! Using 1.5 pounds of ground beef plus all the veggies ended up giving me 6 good size burgers. Served on buttered & toasted buns! YUM!

BLT Bow Tie Pasta Salad

Reviewed: Sep. 15, 2008
I just recently made this salad to accompany a burger & fries dinner and it was a hit!!!! I did make a few changes though... I left out the lettuce [just didnt see the need for it, plus I figured it would wilt and not keep well in the fridge] doubled the bacon and mixed equal parts miracle whip mayo, ranch dressing, and italian dressing for the sauce. As for veggies I kind of just threw in whatever I had on hand [carrots, grape tomatoes, celery, onion & bell pepper] and then seasoned with garlic powder, salt and pepper. Again everybody loved this... even my mother asked for the recipe and she is known for her fantastic cooking!! This was a great base recipe that you can kind of alter to your own tastes...

Italian Breaded Pork Chops

Reviewed: Sep. 6, 2008
The porkchops were delicious but I had trouble getting the breading to stay on once I put them in the skillet. I coated them in flour first, then dipped them in the egg mixture, and then in the breadcrumbs. But pretty much all of the crust came off as it cooked in the oil. Probably just personal error but they tasted great so thats all that really mattered.

Easy Key Lime Pie I

Reviewed: Sep. 6, 2008
WAY BETTER THAN STORE-BOUGHT!!!! This pie was absolutely delicious!!! With the review suggestions (4 egg yolks, 2 cans milk, 1 cup lime juice. bake @ 350 for 20-25 min) it came out PERFECT!!! I LOVE key lime pie but this was my first time trying to make it at home. I will never ever buy it in the stores again. It does come out tart (which I happen to like) so if you want it with less kick, cut back on the lime juice. I did notice that the filling was more yellow than green when I was mixing it so I added some lemon-lime kool-aid to it to get that true lime green color. This also added a little extra punch that I dont think I would have gotten with food coloring. You can kind of tweak the amount you add to your own taste and color preference. I used about 1/3 of a pack- and then used the leftover to make kool-aid with while the pie was baking!!! If you mix the lime juice, milk, and kool-aid together first you can taste and alter it before you add the eggs without worrying about eating the raw yolks. I did not add any whip cream on top until I cut and served it (If you let it sit on the pie in the fridge it will run and be a soggy mess, especially if it is store bought and not homemade whip cream) I also kept mine in the freezer instead of the fridge so that the pie would be firm (and not quite so mushy) Anyway this was incredible and ridiculously easy to make!! TRY IT!!!

I also did this with 1 pound of steamed mussels added in with the shrimp. DELICIOUS!!! So versatile and so good!!

Camp Cornbread

DELICIOUS!! I remember having this as a child and have been looking for a recipe every since. I had no idea it was as easy as adding some cream corn and sugar to a batch of Jiffy mix. It came out soooooo moist and sweet. I also served it with honey butter as another review suggested... mmmmmmm good.
