About this Cook
I have been cooking or my hubby and myself and family for 34 years. By day, i work in a special ed. class and love it. I love to read, needlecrafts and going to the gym.
My favorite things to cook
Dinners are my favorite meal to prepare. Whether in the oven, top of the stove or on the grill, dinner is my preferred meal of the day.
My favorite family cooking traditions
My favorite tradition is to cook thanksgiving dinner and have everyone here. It is reminiscent of the house i grew up in which was small but we had holiday dinners there together at the table. I wanted to have my own traditions for my own family so we have holidays here. My parents are both gone now but my kids still like coming home to Mom's dinner table.
My cooking triumphs
One thing that comes to mind was preparing all the food for my kids' graduation parties. so many guests were here and i was surprised i made enough food! the kids were impressed with having chicken marsala along with everyone else. at the end of the night when my daughter came and gave me a hug thanking me, i knew the day was successful.
My cooking tragedies
One thing really stands out! i was only married a short time when i wanted to make a veal roast for my husband. needless to say, i kept putting it back in the oven when it didn't look done. i eventually threw it out. I found out later on that veal is supposed to be eaten with a little pinkish color to it. I have never cooked another one again!

Scrumptious Salisbury Steak in Mushroom Gravy
I made this recipe with few exceptions--- I used a combination of meats: ground beef, pork and veal. I did not have the buttery crackers so I sauteed some bread crumbs in butter and add that to the meat mixture in a bowl. Rather than mushrooms, I browned an onion in the pan drippings after removing the steaks. Then continued with the gravy. Served with mashed potatoes, this recipe is a "keeper". One "tip" I learned when making burgers--since many of us have the habit of flattening the burgers so they cook through to our liking, we lose so much of the juices that keep the meat moist. If you depress the middle of the burgers BEFORE cooking them as if you were poking a hole in a donut, as they cook the burger center will "rise" up to equal the sides around it and you will have a perfectly cooked burger! I have tried this several times and can attest that it works. I did it with these Salisbury Steaks and they were EXCELLENT!!!!!

Perfect Flat Iron Steak
It may be that I simply do not like Flat Iron steaks. I have cooked them several times and not liking them exactly, I tried this recipe. While I WILL SAY the meat was very tender, I did not like the taste. I doubt I will use this recipe again.

Roast Chicken with Rosemary
I made this chicken tonight for dinner. Yum! My husband and son enjoyed it. I brushed olive oil, rosemary and the juice of half a lemon on the skin before roasting. One addition I did was to put some cooking wine (white) in the roasting pan to deglaze. Then I continued to make gravy as usual. I am sure I will make this one again. Great dish to make on a snowy Saturday!!!
