Mom's Island Treasures

Delicious! I didn't have chocolate chips on hand so I used what I had and that was a baking chocolate bar (60%cocoa). I broke the bar into coarse pieces and increased the sugar buy 1/4 cup and the coconut by 1/4 cup, hoping it would add that extra sweetness. Although they turned out wonderful, I would not recommend using dark chocolate the way I did unless you enjoy a less sweet variation. I would simply follow the recipe as is. Thanks so much!!! They were a hit either way!

Cream Cheese Frosting II

Absolute heaven. Soooo creamy and delicious, not to mention easy. I kept everything the same except for adding about 1/2 cup extra powdered sugar. I used the mixture to frost my carrot cake. A perfect 10 in my book. ;)

Cheesecake Brownies

This was quite literally heaven! So chewy and decadent! I used Betty Crocker's Hershey Triple Chunk brownie mix. Also took the advice of another review which said to line the pan with foil. I did that and it turned out simply perfect! The edges were perfectly golden brown and very chewy and wonderful. I don't like it when the edges are all crisp and blackened lol! The foil definitely fixed that problem. My boyfriend and I can't keep our hands off of them!!! We limited ourselves to 2 per day =))

Apple Oatmeal Crisp

Can I just say AMAZING!!! This recipe was absolutely delicious. I followed it exactly except I took the white sugar and cinnamon and coated the apples in it instead of just topping them. It was perfect severed with ice cream and/or whipped cream.

Chicken Stuffing Bake

I loved this recipe! It was a major hit here at my house. I added cream of chicken x2 to make it extra creamy and 1/4 cup sour cream to add to the flavor. It turned out perfect! Thank you for a great and easy recipe!!
