Cranberry Upside-Down Coffee Cake

This coffee cake is great! It came together very easily, the topping was tart and nutty, and the cake was very light and yummy. I couldn't find the base of my springform pan, so I made it in a bundt. Came out wonderfully!

Apple Squares

I cut the sugar in the cake part by ¼ cup, used at least 1 ½ cups of thinly sliced apples, didn’t use the nuts (although they would have been delish) and cut the cinn/sugar topping in half. Good and easy dessert for a fall evening.

Miss Betty's Super Quick Dinner Rolls

What a great "go to" recipe when there's no bread in the house for dinner. I need to double this recipe for my family of four, though, they go fast! They're great with a pinch of dried rosemary!

Zucchini Bread IV

Yummy! I used 1/2 oil and 1/2 nonfat Greek yogurt and it turned out light and delicious. I also baked it in a 9x13 baking dish for 50 minutes.

Slow-Cooker Chicken Tortilla Soup

My daughter made this over the weekend and we had it Tuesday night for dinner. It was the perfect recipe for a novice cook. She used 4 boneless, skinless chicken breasts and cooked on High for 4 hours. Delicious!

Garlic Chicken

Yummy, yummy! Easy, tasty, and fast. Just the kind of recipe that need to feed this group on a busy weeknight. I did use unsalted butter instead of olive oil, but I'm sure it would be delish either way. Next time, I'll bake on a rack to crisp the underside of the chicken too.

Spinach and Orzo Salad

I made this recipe for a Super Bowl party yesterday. What a hit! The spinach stayed bright green and the feta added just the right kick. I'll definately make it again.

The Best Rolled Sugar Cookies

These really are "the best". I love that they stayed really white after baking. They were crisp and buttery and really yummy with "Sugar Cookie Frosting". I cut out cute little flowers, piped on frosting and put an m&m in the middle. So cute.

Sugar Cookie Frosting

This frosting was a snap to make and pretty darn yummy! I tinted it light pink, piped circles on little flower shaped sugar cookies and put a dark pink m&ms in the centers. So cute!
