Christmas Cranberry Salad

Everyone loved this at Christmas Dinner. It looked very pretty next to the rest of the salads. I added the full amount of all ingredients, except marshmallows--I probably only put a cup, and it was just enough. I didn't have any problems with it being runny like some did. I didn't just drain the crushed pineapple, I squeezed a lot of the juice out. Also, you have to beat the whipping cream long enough for it to be very stiff. I think if yours gets runny, it's because you're not beating the cream long enough or you're using Cool Whip instead. And to cast my vote on the Frozen verses Chilled versions-- I prefer Chilled.

Danish Potato Soup

I love this soup! My boyfriend, who doesn't like ham, loved this soup. Certainly you can add different spices to fit your taste, but don't let that detract you from giving this 5 stars. I tried some with the nutmeg, and although it was still good, I liked it better without nutmeg and with some garlic salt and pepper. I don't understand people who said this was not thick enough. I made it just as written, and it was plenty thick. (I had potato flakes waiting to put into it like some reviewers said, and I didn't need to add them.) Actually, I had to add 2 more cups of water while it was cooking for the 40 min. The recipe didn't say whether to cook with the lid on or off; I didn't put a lid on it. I can't wait to have another ham bone to make this again! -- 1/6/10 I have made this again, and I doubled the recipe because my ham bone was so big; it made a ton. I do now understand that sometimes it comes out thin. I had to add potato flakes to get this to a good consistency. Not sure what was different this time except for doubling it. Still, it's an excellent soup.

Roasted Winter Squash Seeds

5 stars for such a great idea! I love roasted pumpkin seeds; I love squash. I can't believe I never thought to roast squash seeds before. I hate to think of all the seeds I've thrown in the trash over the years. This was such a tasty and extremely cheap snack. Thank you!

Lisa's Chocolate Chocolate Chip Cake

I made this for a co-worker's birthday--it was devoured. I work with a bunch of men, and they all love chocolate. I cut the oil to 1/2 cup and used regular milk chocolate chips. Nice, quick recipe that I will use again. I think I'd like to try the butter cake mix with vanilla pudding as several others have mentioned. I didn't give 5 stars because only 1/2 c oil is needed and 2-3 eggs is enough.

Veggie Sneak In Meatballs

Great idea to get veggies into meatballs; however, I agreed with the other reviewer and went ahead and added the breadcrumbs right to the meatball mixture. They came out a bit watery--I think because of the zucchini. I will use this idea though again for meatballs--adding a little more breadcrumbs. They were very tasty and my son had no idea he was eating zucchini. I used them in a sweet and sour sauce and served with rice.

Country Fried Steak and Milk Gravy

This was my first time making cube steaks or any kind of country steak. Everyone liked it. I served with mashed potatoes. I used butter and olive oil instead of lard. I used garlic salt instead of regular in the gravy, which I liked. The kids liked the steak but didn't like the gravy so much--it got very thick sitting on the dinner table. I will probably make these again.

Italian Peas

They were good. I thought the chicken stock would add more flavor than it did. I think "Peas with Mushrooms" on this site is a better way to make peas.

Fairy easy recipe but looks and tastes very fancy. The shallots are a must--if you've used regular onion, you have to try it with shallots.

Amish White Bread

I was looking for a good, easy bread recipe to make with my 6 year-old. Not only was it a perfect recipe for that, but this is one of the best white breads I've ever made. Absolutley 5 stars as written--no adjustments needed. My family loved it. We'll be making this a lot.

Banana Muffins with a Crunch

Wonderful recipe made as stated. I use Grape Nuts Trail Mix Crunch for the granola. But I love to play around with substituing ingredients (adding flax seed, using whole wheat flour, brown sugar, etc.) All the reviews give lots of ideas. I have made this into mini loaves and worked fine, but like it best as muffins.

Microwave Popcorn

Wonderful idea!, but doesn't make large quantities. I burned mine when made as stated, and the recipe should include how to set up the bag. After reading reviews, made with 1/4 cup popcorn, 1/2 tsp oil and a few shakes of salt, then put the bag upright and microwaved for 2 minutes. Only a couple kernels weren't popped. As someone else suggested, I sprayed with some butter spray. Tasted pefect.

Autumn Apple Salad II

Good salad as is but can be jazzed up more for company/potluck. One reviewer said something about caramel yogurt, so I added a nice spoon full of caramel icecream topping--yum, yum. I used rather small apples and had just enough yogurt to cover. So if using large apples, you may want to use two containers of yogurt. I knew I would have leftovers and hoped the yogurt would keep them from browning. The next day the apples were still perfect.

I used canned green beans and it tasted fine. It was a bit too salty for me--I'll cut the regular salt in half next time. Using green onions was different; I liked it.

Slow-Cooked Country Ribs in Gravy

These are the best country ribs I have ever made in the crock pot. They were so tender and not dry at all. I had 4 lb of ribs. I used 1 Tbsp yellow mustard instead of the dry and one can beef broth intead of water and bouillon. Cooked for almost 9 hours. Added 2 Tbsp cornstarch to the pot, and the gravy was very tasty over potatoes.

Creamy Rice Pudding

Wonderful, whether served warm or cold. It does not taste like a quick, stove top recipe. I almost left out the butter--but it's a great addition. I had to add some cinnamon and nutmeg because that's what I like in my rice pudding, but I would have eaten it without it.

Easy and Fun Peanut Butter Balls

Maybe it's because I wasn't raised on these like some reviewers said, but the gritty texture was hard for me to get past. I definitely had to roll them in something to eat one. I think they would be better if you actually mixed in coconut or cereal instead of just rolling them in it. I couldn't eat the rest of mine as they were, so I let the balls soften and put one between two Ritz crackers. They were okay as a filling. My nephew is 5, and he liked them.

Tamra's Microwave Tilapia

I had no idea you could microwave fish. This is a 5-star recipe for what it is--quick microwave cooking. It came out perfectly. I went light on the apple cider vinegar because of some negative comments in the reviews, and I ended up adding more after I started eating it. The flavor blended very well with the other flavors, and next time I'll put the whole amount on right away. I used dried tarragon, but would love to try it with fresh. I'll make this again and again.

Appalachian Slaw

This was a good mix of vegetables. I like tomatoes and cucumbers in this slaw. But the dressing needs something more. I used 2 Tbsp of mayo, but I don't think adding more mayo is what it needs--maybe a litte bit of ranch dressing added to it or Miracle Whip instead of mayo. I was looking for a slaw recipe without vinegar, so I'm trying to keep from adding that to it. I'll definitely try this one again with some additions.

Easy Lemon-Blueberry Jam

Absolutely wonderful and so easy. It set up very well. My 6 year-old helped me make it, and he loved having it on his PBJ sandwich the next day. I think you could use a little less sugar, but that would depend on your berries. I used the whole 2 cups and didn't think it was too sweet.
