Pumpkin Risotto
This was good. I changed a few of the ingredients to save money (took out the onions, used more garlic instead; used Italian Seasoning rather than thyme or sage) and used chicken stock rather than the cubes like a previous review had suggested. It was really good, but I ate it by itself and it probably would have been better along with something else, like chicken.

Slow Cooker Pineapple Pork Roast
I used pork tenderloin because I had some I needed to use up, poked holes in the pork before cooking, and added 1/2 cup teriyaki sauce and half an onion, like some of the other recipes had suggested. The flavor was very good and everyone loved it. It was a little dry for my taste because I usually like a lot of sauce; next time I might add more pineapple juice to cover the roast. Overall good.

Scallops Mascarpone
I thought this dish was only ok. I made it for a dinner party and was a little disappointed. I love scallops and the vegetables were great, but I thought putting a sauce over the scallops kind of ruined them, and overall the dish was bland.
