Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo
I love grilled fish tacos - so I omitted the breading, but still slathered in the lime/honey/cumin sauce as it grilled on the stove. As someone else suggested, I used jicama and carrots rather than traditional coleslaw, and omitted the peppers in favor of just using more of the adobo sauce for flavor...I was being lazy about pulling out the food processor. This way, I could just mix the mayo with the sauce. A great combination of unusual flavors!! I'm excited to have a fish taco recipe to make at home!

Tex-Mex Burger with Cajun Mayo
My husband called this "the best burger he's ever had!" I'm thrilled to have a go-to burger recipe. I did make a few modifications just to personalize it to our tastes...added diced mushrooms, used soy instead of worcestershire, and used ground turkey rather than beef.

Corned Beef and Cabbage
A taste of the old country! Just like my Polish grandmother never used to make. :) We prepared everything the night before (cut up the veggies, etc) and then just assembled it in the crock in the morning. Like other reviewers, I put the corned beef in the bottom of the crock (it was already seasoned in the package when I bought it, which was nice - the beef is already marinating in the spices to impart some flavor!) Added water mixture plus some extra water to cover the beef, added veggies, and then just a bit more water to ensure the beef was covered. On low for 9 hours (cold from the fridge), and then left it warming for 2 more hours until we were ready to eat! Perfectly done. Delish.
