Butternut and Apple Harvest Soup

This is an amazing soup! I used a sweet potato instead of a regular potato; this gave it a prettier color as well as more flavor. My leeks were huge, so I only used one. I used a golden delicious apple instead of a granny smith, because that is what I had on hand. Instead of light cream and wine, I used milk mixed with a little water, so that it wouldn't be quite as rich. It was awesome! I will be making this one again...thanks for sharing!

Very Chocolate Ice Cream

This is a very good and easy to make ice cream recipe. The finished product tastes like store-bought ice cream, except that it has a richer chocolate taste. I was short about 1/2 cup of cream, so I used whole milk instead. Altogether, this is a very good, rich, chocolatey ice cream. Thanks for sharing!

Butter Pecan Ice Cream

This ice cream was amazing! Like other reviewers, I cut the sugar down to 3/4 cup...it was perfectly sweet that way. I didn't have any half and half in the house either...I combined a cup of whole milk and a cup of heavy cream. I took 1/2 a cup of this and used it in place of the cream that is used later in the recipe. I also added a few extra pecans, because they are so yummy! To make them more like the kind in the store, I stirred some extra salt into the melted butter. Yum! Other than that, I pretty much made it exactly as written, except that I cooled the cream mixture down before pouring it into the ice cream maker, and didn't stir in the pecans until the end, because they get stuck in the churn. All in all, this is an excellent, creamy ice cream that has a wonderful, crunchy, sweet, buttery and nutty flavor...I will be making this again!!!

Golden Sweet Cornbread

This is very good cornbread! I like mine to be sweet, and this was perfect. I 1/2 cup of whole wheat flour and half a cup of white flour...my family didn't notice the change. I also cut the baking powder to 2 1/2 tsp, 3 1/2 seemed to be a bit much. My family and I liked this one...thanks for sharing!!!

Cinnamon-Apple Angel Food Cake

This was pretty good, and certainly a change of pace from regular angel food cake. My only problem with this was the amount of sugar...it was VERY sweet. The cake part by itself was good, very tender, sweet, and melt-in-your-mouth, but when combined with the glaze (which was also very good, with a luscious caramel-like cinnamon apple flavor) it was just too sweet. I love the idea...I might try making the glaze again with a different angel food recipe that contains less sugar. I know that I've made other ones that don't contain 1 cup of granulated sugar plus 1 1/2 cups of confectioner's sugar! Altogether, this is a great idea, thanks for sharing this fall dessert!

Spinach Tortellini Soup

This soup looks SO unimpressive...watery-looking broth with spinach leaves and tortellini floating in it, but after one bite, I was hooked! It was bursting with flavor! I did make a change...I was out of frozen spinach, so I used fresh and just eyeballed it (I know I used much less than 10 oz) and I used one clove of fresh garlic instead of the powder. The flavor of the tortellini I used was Romano Cheese and Sun-dried Tomato (YUM!) and they really complimented the flavors well. Next time I make this, I might add some other veggies, like tomatoes and carrots, but this soup is excellent just the way it is. Thanks for sharing!!!

Cheddar Bay Biscuits

These biscuits were good, but not awesome. I cut down the amount of butter to 5 tbs. and I still had extra. The biscuits were also pretty salty, and very crumbly. I did find an easy way to shape these, though. The dough was sticky, like a cookie dough, so I used my large cookies scoop to easily make small, uniform, round biscuits. This worked so well that I'm always going to use my cookie scoop for drop biscuits from now on! Thanks for sharing!

30-Minute Minestrone

What a quick, easy, healthy soup! I made it exactly as written, and found that it wasn't quite flavorful enough...the pepper gave it some heat, but other than that, it needs some herbs or something. It is warm, filling, and very good for you, though, so I might make it again. Thanks for sharing!

Sweet and Salty Granola

This granola lives up to its name, as it is very sweet, and somewhat salty. I found it to be just a tad too sweet, though. I used about 2/3 cup of walnuts, and added some raisins as well. Next time, though, I am going to add all of the walnuts, because they got coated with the brown sugary coating, and toasted in the oven...so yummy! They made the granola worth eating! I don't think that I over-baked mine, but it did turn out very hard, almost too hard. The cinnamon and vanilla flavors are very strong...and I only used 1 tsp. of vanilla! All in all, this is a good recipe that I will probably make again. Thanks!

Irresistible Double Chocolate Muffins

Wow! These muffins were surprisingly good...I was unsure of how they would taste, with all the strange, healthy ingredients. I didn't tell my family what was in them until they had devoured them all...even the ones who HATE whole wheat with a vengeance really loved these muffins! I did notice that the wheat germ left little "flecks" in the muffin texture that was slightly annoying...it was the only thing that made these muffins seem "healthy." Even so, I consider any recipe that will get all members of my family to enjoy whole grain to be a success...thanks for sharing! I will definitely make these again!!!

Chicken Noodle Casserole

This is truly comfort food...my family really liked this dish. It has a warm, comforting, homey flavor that I loved. It did require a little extra time to put together, because everything is from scratch, but the end result is worth it. Not only is it healthier because there are no prepared convenience items, but the taste is better. The only change I made was to substitute dried ground rosemary for the savory, because that was what I had on hand, and I prefer the taste. This is the recipe I will turn to on a cold winter night when comfort food is needed! Thanks!

Quick and Easy Chicken Noodle Soup

This soup was perfect...just the right amount of flavor. I didn't have any cooked chicken around, so I just boiled 2 boneless skinless chicken breasts in some salted water until they were cooked through, used the meat and the resulting broth in my soup. All in all, I used 9 cups of homemade stock instead of the 5 cans of store-bought. I also used elbow pasta instead of the egg noodles...my family really loved this! I felt it made more than 6 servings...thanks so much for sharing! This is a winner!

Daddy's Whisker Soup

This soup was great! When my very picky family first saw it, they turned their noses up. I told everyone that they had to at least try it, and every single one ended up loving this soup! My potatoes were very large, so I used 9 instead of 12. I also used only 4 cups of milk...I saved the potato liquid and used a cup of that in place of the last cup of milk. I hated to see that flavorful water go to waste, and the soup was very rich, creamy, and yummy without the last cup of milk! This recipe is just what I wanted, cheap, easy, family friendly, and yummy! Thanks for sharing!

Pumpkin Cream Cheese Muffins

These muffins are AWESOME!!! I cut the recipe in half and made it in mini muffin tins...I got 18 mini muffins when I did this. The only problem I had was that they had a distinct olive oil taste and smell...it wasn't quite unpleasant, but certainly unexpected. I did use extra virgin olive oil, though...next time, I will use a less potent oil! Other than that, I made the recipe as stated, no changes. These are perfect just as they are! They are wonderful, and aren't all that bad for you, either! The pumpkin replaces most of the oil in this recipe, making the muffins tender and adding flavor without adding tons of fat. Thanks so much for sharing this one! It is awesome!

Summer Squash Slaw

This recipe is...interesting. It looks beautiful, but the taste leaves something to be desired. I can't really describe it...this just tasted strange. If you want to try it, make sure that your squashes have tender, soft skin...one of mine was tough, and that didn't help any. Thanks for sharing, but I'll pass!

Cinnamon Swirl Bundt Coffee Cake

This is a very tasty and moist coffee cake. It is also very pretty! Like other reviewers, I added a vanilla glaze, and I also skipped the nuts, because I didn't have any and my sister is allergic. The cake was so pretty to cut into...the ribbon of cinnamon through the middle was beautiful! I really loved the texture of the cake, it has a very moist, tender crumb. The cinnamon flavor is very noticeable, but not overpowering. Thanks for sharing this one...it is a keeper!

Coffee Shortbread

First of all, I want to say that I am not a fan of coffee, but I loved these cookies! They are rich and buttery...the only problem I had with them is that the dough was REALLY sticky...I chilled it for two hours before I was able to roll it out. Even so, my first batch spread a lot and didn't look all that nice. The texture was a bit crisp, but still really delicious! I also had a problem with the white chocolate...it was so thick that it wouldn't pipe smoothly. I added about 2 tsp. of shortening and remelted it; that really helped to smooth the chocolate out! Thanks for sharing this recipe...it is a winner!

'Calabacitas Guisada' (Stewed Mexican Zucchini)

I think I accidentally cooked my zucchini a bit too long when I made this recipe, but it was still very tasty! I used one very large zucchini and about 1/4 of a mammoth zucchini...I wasn't quite sure what size of zucchini should have been used in the recipe! I also used my own frozen homegrown tomatoes instead of the canned ones, and adjusted the seasonings accordingly. I also used sharp cheddar cheese (family preference!) Thanks for sharing...this is a really simple, tasty, healthy, and comforting side dish!

Pumpkin Coffee Ring

Wow...this is an incredible recipe. I was totally unsure of what to expect; the ingredients looked yummy, but very different. I was in for a surprise! I didn't have any walnuts, so I used pecans instead, and I also skipped the raisins (family preference!). The ring is a little hard to shape, because the filling is rather runny. When you are rolling the dough/filling jelly-roll style, be careful to lift the rolled part up slightly so that the filling won't start "bunching up", and ooze out all over the counter when you are done rolling. My ring spread out a lot more than I thought it would...my dough might have been a touch soft. In any case, the ring was so delicious...my family devoured it in about 3 hours! The ratio of dough to filling was perfect; there was just enough filling to keep the ring moist and give a good pumpkin/spice flavor, but not so much that it overpowered. The glaze was also perfect; there was just the right amount, and it had an excellent flavor/texture. I garnished my ring with some tiny pecans I had lying around...they looked so pretty! Thanks SO much for sharing this one...it is a keeper, and I will make it again and again!

Black Beans, Corn, and Yellow Rice

This is a very tasty recipe! Some of my picky younger siblings enjoyed it...that is saying a lot! I was a little disappointed, though, that I could not taste the lime juice or the cumin. Even so, this is a really tasty and super easy family-pleasing side dish. Thanks for sharing!
