This was really good. A few modifications: served it HOT with melted cheese and crushed chips; Added salsa and a chopped onion. Delicious!

Kerry's Beany Salad

This was GREAT! Everyone loved it. I did make some changes: omitted the lettuce, doubled vinegar, doubled garlic, added a can of italian diced tomatoes, used regular onion instead of green, used dried beans - soaked and boiled without salt, halved the oil. It was awesome! Hubby and 2 year old couldn't get enough. :-)

Taco Salad

This was a great starter recipe! I definitely prefer the beans/"meat" to be warm, so I cooked on the stove top. I also added a packet of cooked mexican rice to this mix so there was a grain in the meal. With sour cream and an avocado, this was a HUGE hit with the family!

The Best Veggie Sandwich

This was AMAZING! The ranch dressing and cheddar cheese combine with veggies on an English muffin to melt in your mouth and entertain your taste buds... In other words, BRAVO! I added minced black olives to half of mine, it's perfect either way! Even my two year old and picky man ate these.

Spinach and Potato Frittata

This recipe was a great starter for an amazing breakfast! I made some alterations and added quite a bit, and it turned out fantastic. Still needed a bit more salt in the end. Here is what I did: Used half the oil I only used 4 potatoes, added dried basil while cooking those plus seasoned them with a bit of salt and pepper Then I added in about 3 times that much spinach and 3 times the green onions - with some water added to help wilt them without the extra oil Added 8 oz fresh mushrooms - chopped Added 1 green bell pepper - diced Added 2 extra tablespoon fulls of minced garlic Added 2 more eggs and more milk (used skim milk) Added a tomato (chopped) with the eggs and milk Added Muenster Cheese to the top and sprinkled the cheddar on top of that Then I finished it in the oven at 400 degrees for 15 minutes instead of cooking it the rest of the way on the stove top LOTS of veggies in it, and it's SO good! I think it would be awesome with some salsa or tobasco. Maybe next time I might use some garlic salt on the potatoes and dice a jalepeno to add with the spinach for a bit of kick (no seeds - can't be too spicy in the morning, lol).

Brown Rice, Broccoli, Cheese and Walnut Surprise

Wow! This was delicious! I boiled the broccoli with garlic salt and pepper and doubled the walnuts, but left it alone otherwise. SO yummy! I might sautee the broccoli with soysauce and sesame seeds next time for more zip, and maybe add a bit of Thai Chili sauce to my own plate. Great recipe!

Unsloppy Joes

I really did not care for this recipe, and neither did my family. I cut the chili powder way back, but it still didn't make it taste right. I think it needed more beans, maybe with another can of kidney beans mashed up? Not sure how to salvage it, really. We ate it, but I probably won't make it again.

Avocado Tacos

This was a great basic recipe! So easy to expand on! I would suggest a few things... Put some lemon juice in with the avocado mixture, gives it a nice zip. I cooked some TVP (textured vegetable protein - a ground beef substitute) with some taco seasoning, and my family didn't even know they were missing the meat! I also love this recipe with some chopped fresh tomatoes and cheddar cheese. Lettuce, black beans, corn, sour cream etc. would also make nice toppings for this recipe - I might just put them in little bowls and let the family serve themselves! Also - 1 bunch of cilantro was too much, I would have said half bunch at most.
