Coconut Macaroons III
This recipe is phenomenal. I made them for a family dinner party, and you would have thought I walked on water. My mother, the calorie-counter, workoutaholic, actually ate 5 in one sitting. AWESOME! I was able to get 22 cookies out of the recipe, and I chose to refrigerate the dough for an hour to improve the consistency. Easy, decadent, and delicious!

Vegetarian Baked Pasta
This recipe was wonderfully easy, and it made a delicious meal that my husband adored. The gorgonzola is such a refreshing addition to a baked pasta! I twisted the recipe a bit by using whole wheat penne, sauteing equal parts sundried tomatoes and roasted red peppers with my portobellos. I also ended up cooking it for about half the time- any longer and my noodles would not have been quite as firm.

Coconut Curry Tofu
Phenomenal! It had great flavor and texture, plus it was healthy and hearty to boot. We added a few extra veggies to the mix by including snap peas and zucchini, and I used cabbage instead of bok choy (but I scaled down the amount to allow for other veggies). I also fried the tofu, but I added curry powder and soy sauce to the process to infuse extra flavor. I served it over couscous, which balanced it nicely. Next time, I might get a little extra coconut milk because the broth did not go quite as far as I would like (but I tend to like a soupier curry). Definitely going to become a staple in our house! YUM!
