Slow Cooker Pineapple Pork Roast
This roast tasted absolutely delicious, but I had to give it three stars for two reasons. It was INCREDIBLY dry which I thought was very strange as it had cooked in liquid on low all day. It was also very very tough, which I don't understand. The roast I bought is the same cut of meat I use when I cook the roast in the oven. It is completely cooked and tender within an hour. So the fact that this was dry and tough really baffled me. I recommend turning the roast half way through the cooking time if it is possible. I found that it cooked evenly, but the bottom half had much more flavor. If you don't mind the dry, tough meat, give this a try because it does have a delicious flavor. One more thing, once I realized how dry it was, I sliced the whole thing and slid it back into the liquid for ten minutes. It really moistened it quite a bit.
