About this Cook
I love to cook! I"m married to a great guy who doesn't have a wide variety of tastes. I spend most of my time cooking trying to sneak in ingredients that he swears he wont eat, but loves when he doesn't know what he's eating.
My favorite things to cook
I LOVE Italian, Mexican, desserts, and anything with chicken.
My favorite family cooking traditions
A few years ago my mom stopped making the traditional Christmas dinner with turkey, cornbread dressing and ham and we started making chicken and sausage gumbo. We use my great-great grandmother's cajun recipe and have never looked back. The secret is to use butter to make to roux and to cook it until you smell it. NEVER use the store bought stuff if you make a butter roux there is absolutely no comparison!
My cooking triumphs
The first time I made chicken and dumplings was amazing! I was completely intimidated by making my own dumplings. Everyone told me to buy the frozen ones but I had tried them and they didn't have the right texture or taste homemade. So I was very proud of myself and it is now one of my signature dishes.
My cooking tragedies
Tuna noodle casserole.... enough said.

Chocolate Trifle
Fabulous!! First time I made this I followed the recipe and it was entirely too sweet. The second time I made it I followed the suggestions of other reviewers. I made a fudgey brownie and for the chocolate pudding layer I used half a pint of heavy whipping cream. I whipped the cream and added the chocolate fudge pudding mix and water to it. I also layered crushed oreos between the chocolate whipped cream and the regular whipped cream. In my opinon the oreos were what made it in the end. If you make this it MUST be made a day in advance!

Classic Peanut Butter Cookies
PHENOM!! my absolute fav classic peanut butter cookie!! Only changes made was an extra 1/2 cup of peanut butter and 1/2 cup of flour to make the cookies soft and plump. If you add this you do not need to refrigerate.

Slow Cooker Buffalo Chicken Sandwiches
Buffalo wings w/out the mess!!! So good! Added more butter to cut back on the spice.... we are wimps in this household! lol
