Cheesy Acorn Squash
I'm not a squash fan, but I thought that this was pretty good. The flavors of the onion, celery and mushrooms overpowered the squash which is a good thing. :) Will make it again.

Quick Yeast Rolls
I found these to be great rolls to enjoy with a hearty soup. They were easy to make and turned out nice and fluffy.

Spanish Rice Bake
Was a cheap dish to make. My kids and husband enjoyed it. It's certainly nothing gourmet but is a nice basic dish. Next time I will add some garlic though.
