Slow Cooker Creamy Potato Soup

Great recipe and makes a LOT! I was able to get away without stirring it occasionally, as I left it to cook while I was at work for the day. I will add a bit more bacon next time as well.

Mexican Lasagna

This was a good basic recipe but the tomato flavor was a bit too strong for us so I'm thinking of modifying it by substituting crushed tomatoes for the diced tomatoes, as well as using half as much and replacing the rest with kidney or pinto beans. Also might top it with enchilada sauce instead of salsa.

Tortellini, Steak, and Caesar

This was a hit! The recipe says it serves 4, but I ended up using a steak that was a little over a pound, plus 16 ounces of pasta instead of 9. It ended up being lunch for 5 people, with enough left over for dinner for 2!

Peach Curry Glazed Pork Chops

Great recipe! I'm not sure what size pork chops the recipe is referring to but mine were around 1" thick and took quite a bit longer than 8 minutes to cook. I like the idea someone else mentioned of making extra glaze -- I served this over rice and extra glaze would've been great!

This recipe was pretty good, although I cut the amount of onions in half as they aren't terribly popular in my household. I also used dry basil instead of fresh. Still, my husband took seconds and I know that's a sure sign that he likes something!

Simple Baked Beans

This is an easy, basic, and adaptable recipe! I doubled it to make 20 servings for a 50th birthday bash, and got two great compliments, one from the birthday boy and one from the best cook in the family. I did it in the crock pot, and found that very convenient. However I would make a couple changes: I used 4 cans of pork and beans, in the future I will drain two of them. Some of the bean liquid is needed but there was too much. Also, it is a little on the sweet side so I might decrease the amount of sugar. A few too many onions for our liking as well. The recipe was unclear about whether the bacon should be cooked first, although I assumed it should be and in the end we agreed that was a good idea. Finally, the molasses I had used was apple cider molasses. I'm not sure how much of a difference that made but it would be interesting to try it with "regular" molasses.

Lime Chicken Picante

One of the best chicken recipes I've come across in a long time! I did find it would've been better to use smaller chicken breasts. The ones I used were quite large and I would've liked the cooked marinade to go a little bit farther.

Blackberry Pie III

I've taken this to two picnics and my only disappointment has been that there was never any left to take home! It's so good, and so simple! I admit, I used frozen blackberries, and if it was good with frozen blackberries I can just imagine how good it would be with fresh!
