Simple Sassy Salmon

My daughter didn't necessarily think this was anything special, but my son - who refuses to eat salmon - loved it. Substituted fresh garlic for the powder.

Bacon Cheeseburger Roll-Up

My kids went crazy for this. Even my finicky son who has to get his arm twisted to even try most foods took one bite and then promptly begged me to make it again tomorrow. It's easy, it's versatile, and I'm excited about finding a new way to get protein into my carb loving kid, lol.

Black Bean and Couscous Salad

I only used 1 can of beans, but otherwise I followed this to the letter and ohmigod, fell in love. It's light, it's flavorful, and it's healthy. Win/win all around!

Cheesy Baked Eggplant

My husband loves eggplant, and I've been trying to find an eggplant parmesan recipe that works for both of us for years. This is the first one to get both of ours enthusiastic thumbs up. I followed the recipe almost exactly. My only substitution was for the pasta sauce because I don't buy those. I used a can of diced tomatoes instead, with most of the juice drained away. It turned out slightly runny, but that was my fault and didn't detract from the recipe at all. For us, the spinach really pulls it all together and gives it a fresh flavor.

California Roll Salad

Though I liked the base combination, I had serious reservations when I tasted the dressing before adding. It tasted too vinegary, but I was reluctant to add anything until I tried it on the salad itself. So rather than tossing the entire salad with it, I did individual portions. The over-acidity of the dressing almost vanished completely when it was on the base; it's the combination that makes this recipe nice. I wouldn't call it amazing, though my daughter loved it. But it certainly made a nice change. I used romaine instead of iceberg, and seaweed for a little more authenticity.

Mack's Tunaburgers

These didn't turn out well at all. Neither one of my kids would do more than take a bite and taste it, in spite of trying to smother the taste in cheese and mayo and anything else that would make it edible. The mixture was too wet, which was weird because I added even more bread crumbs than the recipe called for when I saw how it would not stick together to make patties. And our favorite teriyaki sauce, even though I used less like other reviewers suggested, just didn't combine well with the flavor of the tuna. A waste of ingredients, especially when my daughter turned around and asked if she could just have a regular tuna salad sandwich instead.

Spinach and Tortellini Salad

This was a hit with the whole family. I used fresh spinach and more olives than were called for, but then my family loves them. I also added salami for my picky son. By the time I'd tossed all the ingredients except for the dressing, it looked like it didn't even need more, so I chose instead to add a couple tablespoons of a ranch vinaigrette I had on hand. Was just enough to push it over the top, and my son devoured it, even the spinach which I can never get him to eat. The kids have asked me to put some in lunch boxes for school now!
