Blueberry Buckle

This recipe was delicious. The only things I changed were I didn't have shortening so I used butter, used brown sugar in the topping, ran out of flour so I used cake flour and I baked at 350 for 45 min. I will definitely make this again!

Cinnamon Coffee Cake II

My husband and daughter loved this recipe. It was very moist, but I might try changing the topping next time. I didn't care for the topping in this recipe but the cake part came out great. It also took a bit longer than stated to cook, by about 15 minutes.

Sturdy Whipped Cream Frosting

Very good whipped cream frosting. I didn't have almond extract, so I just used extra vanilla. I did add a little more sugar and vanilla so I would have more of a whipped cream taste instead of cream cheese frosting. Overall very delicious.

Brooke's Best Bombshell Brownies

These were so delicious and perfectly fudgy. The only thing I changed was the sugar. I used 1 1/2 c. brown sugar and about 1/2 c. white sugar. Then I used the mini semisweet chips and just eyeballed the amount. I always set my timer for less, so I set it for 30 min and just added 4 min until I got the consistency I wanted. They are divine. I tried another recipe on the site with high ratings, but this one definitely is my favorite.

Gingerbread Waffles

These were delicious even though I was missing some ingredients. First, I substituted pure maple syrup for the molasses. Then I had to make my own allspice - equal parts cinnamon, nutmeg, cloves & ground black pepper. Finally, I didn't have buttermilk, so I put 1 Tbsp lemon juice in a measuring cup and added skim milk up to the 1 cup mark and waited 5 minutes and then added 3/4 c to recipe. I also added 2 Tbsp flax and 2 Tbsp wheat germ. Despite all of my substitutions, they were wonderful!

Baked Spaghetti

This recipe was delicious. I used what I had - 13.25oz box whole wheat spaghetti, about 1 1/2 jars sauce ( tomato basil & rose ), 1 1/2 (12oz) cottage cheese containers and I used 1.5 lb ground turkey seasoned with onion powder, garlic powder & Italian seasoning. I omitted the onion because my husband doesn't like it (used powder instead). It turned out great and my family loved it.
