Chicken Potato Bake
I thought this was a great easy meal with fresh ingredients. It is a recipe that can be prepared the night before, left in the fridge and anyone can pop it in the oven to cook.
To enhance the flavor I used Delallo Garlic , basil & Tomato italian seasoning. I used olive oil and white balsamic vinegar and some seasoned chicken stock from chicken legs I had baked in a covered dish that night.
I added about 2 cups baby carrots with the potatoes to make it one-dish meal. After an hour, I removed the chicken to keep warm in the microwave and added about 2 cups of water then cooked the carrots and potatoes for another 30 minutes.
