Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze
This was tasty, but I won't go to the effort again. My husband makes BBQ ribs in the oven by simply smothering the meat in spicy BBQ sauce and then cilantro. It tastes exactly the same without as much work.

Creamy Au Gratin Potatoes
This was delicious! Will make this on a regular basis. My potato hating child actually gobbled these up. I diced the onions though. Make sure not to fill the dish too close to the rim because it will bubble over!

Shortcut Chicken Manicotti
This was a big hit with my family. I wanted to make manicotti, but was looking for a recipe without a tomato base. This was exactly all the ingredients I was looking for. Took a bit long to make, but I will definitely keep this one in rotation.
