Chicken, Garlic, and Sundried Tomato Pasta

Yum! I made this without the chicken (because I didn't have any) and doubled the sauce. For such a quick and simple recipe it was a lot better than I expected. The sauce is way too tasty. I couldn't help but sample it while cooking. Excellent, will make again!

Beer Batter Fish Made Great

This was my first attempt at making beer batter fish. I found it to be very simple and tasty. Thanks to suggestions of coating the fish in flour, I had no problem with the batter staying on and the fish was nice and crispy. My son doesn't like a lot of pepper, so I cut the pepper and paprika in half and only had 1 Tbsp of garlic powder left so I used that and 1 Tbsp of onion powder. I did not find the amount of salt in the recipe to be too much, however I did not salt or pepper the fish before rolling it in the flour & batter. Will make again - Thanks!

Chicken Enchiladas II

These were very tasty. I followed the directions exactly as printed and they turned out great. Once I pulled them out of the oven, I added black olives, sour cream and chunky salsa and then served them. They were a huge hit!

Swiss-Barley Mushroom Soup

This was really good. I thought the soup was rich and delicious. I used 2% milk the first time I made this and it seemed a little thick. I used skim milk the second time and it turned out great! I'll definitely be making it again and again!

White Cheese Chicken Lasagna

This was very good - the sauce was super! A great alternative to regular lasagna. The only thing I would do differently next time is cut the amount of spinach in half...it was a little too much.

Party Pinwheels

These were great - super addictive! The only thing I would do next time is cut back a little on the ranch. I love ranch and salty foods, so I was surprised to find the whole packet made it a little too salty for me. I think this would also make a great spread for ham or turkey roll-ups too. Excellent recipe!

Great White Pizza

This was simple yet tasty. I used my own homemade ranch dressing and added a little more of that and a tad more cheese. There are a lot of possibilities with this for add-ons too! I will definitely be making this again. Thanks!
