About this Cook
I am a mamma of one. I have a 4 year old little boy who loves to cook as much as I do. I feel so accomplished when we sit down at the dinner table every night to a home cooked meal. I am blessed with a kid who will try and eat anything!
My favorite things to cook
I love to cook anything with chicken. I love casseroles and one dish meals. I'm not to big on baking. But I would like to be able to make some good homemade cookies for my son.
My favorite family cooking traditions
Growing up me we always had Thanksgiving at our house and every year I would have a certain job my mom would assign me. Nothing to hard because she was the amazing cook. I remember all morning running around the kitchen with all the yummy smells and all of our loved ones there. Thats where wanting to learn how to be a good cook came from.
My cooking triumphs
Making Pork Chops, Scalloped Potatoes and Asparagus with no help or recipes! I was so proud of my self. It was my first meal with out a recipe card!

Stuffed Shells I
So this is the recipe I use all the time except I use good ricotta instead of cottage cheese, 1 egg instead of 2, add 1/2 pound chopped FRESH spinach and 1 clove minced garlic instead of powder. I also put extra mozz cheese on top cover with aluminum foil bake 40 minutes, remove foil and bake until cheese is nice and bubbly. Putting the foil and extra cheese on top prevents the shells that aren't covered from the sauce from getting crispy.

Easiest Peanut Butter Fudge
I am so excited, this was my first time making fudge ever! It was so easy and oh my gosh amazing! I upped the peanut butter to a cup and kept everything else the same!! Thank you so much for this recipes ANGIEH I already have family members asking for more!!
