I'm still young and in college and since I do not have a kitchen of my own I am stuck with cooking at my mother's house or at my boyfriends. Which is fine by me since his family raves about my cooking. :-)One day I will have a beautiful kitchen though and finally have my very own slow cooker!!
My favorite things to cook
Oh gosh, I have tried everything. I hate cooking any kind of pasta. It is just boring. My boyfriend loves mexican so I try to find creative recipes in that category.
My favorite family cooking traditions
My mom used to make a lot of casseroles which I loved, but I don't make them all that often, since I don't work 8-5 every day I have a little bit more time to prepare and cook. My whole family cooks, sister, brother, mom, and step dad and I am NO WHERE near as good as them. I am learning though. :-)
My cooking triumphs
Oh, it was the first time I ever cooked for anyone. I REALLY wanted to have a dinner party and I was watching my sister's house while she was away. She told me I should have a mexican theme and I made these really easy enchiladas. But gosh I just remember how much EVERYONE loved them and how good it felt. That is when I decided I should learn more about cooking.
My cooking tragedies
I tried to make a pork tenerloin that was wrapped around this REALLY delicious fruit combination with apple juice and dried fruit and some rosemary... but sadly I had the oven on too low and it took FOREVER to cook. I swear it was like 12 mid-night before I decided it was done. It was like the second meal I had ever cooked for someone! It's funny though because I have recently found that recipe on this site so I am going to have to try and make it again!

Egg Casserole
My grandma used to make this everytime we went to see them. Delicious! My sister gave me a new idea which I tried and loved! Instead of the pieces of bread we bought the frozen packages of hashbrowns at the store and added those in and it is wonderful. I also added a little bit of green onion for some more flavor.

Chicken Cordon Bleu I
I dipped my rolled up chicken in a beaten egg and then in chicken broth then into the bread crumbs. I also added italian seasoning to my bread crumbs to give it a little bit more flavor. They were very very good though!!!

Cheesy Chicken and Rice
My mom used to make this ALL the time when I was younger so I absolutely love this combination. And it is SO easy. I usually do put the chicken in a skillet first just to brown the top and bottom and then let it cook through while baking. And I also cook the rice a little bit before putting in the dish to bake.
