Artichoke Chicken
I love this recipe so much, I double the topping ingredients. Instead of using so much mayonnaise, I cut it by half and replace with Greek yogurt. It's still creamy and delicious, but without so much fat. I like to fix this at least 3 times a month. Hopefully we won't get burned out on it.

Modenese Pork Chops
This is a very easy and delicious dish! I simmered the chops for a while longer than the recipe called for since they were so big. They came out very moist and flavorful. Also, I used fresh rosemary since I was out of the dried and added a little more wine than was called for to have more of the wonderful sauce.

Eggplant Parmesan I
I tried this last night as a "test run" dish for my Bunco group get together. One of us is vegetarian, one of us is not eating white flour and sugar, etc... Anyway, this recipe was very good and will fit the criteria for most diets and eating plans. I will make it again and again.
