Award Winning Soft Chocolate Chip Cookies

Reviewed: Nov. 14, 2009
My fault for following another reviewers suggestion about adding baking powder. I knew better than to add it, but so many people seemed to agree, thought I'd give it a try. If you want cakey cookies, then be my guest and add the baking powder, I however, did not. I'll def follow the recipe as written in the future to see how they turn out

Flatlander Chili

Reviewed: Nov. 12, 2009
The first time I ever made chili and it came out great! It was super simple to prep. I cut the recipe in half and cooked it in a big sauce pan. I was planning on making it as is but decided against it based in what I thought would be lower sodium. I wanted to use low sodium juice but didn't want to compromise flavor, which is the only reason I used others recommendations to do sauce instead of juice and tomatoes instead of sauce. I also added shredded carrots. Will definitely be making this all season long!

Downeast Maine Pumpkin Bread

Reviewed: Oct. 18, 2009
I cut the recipe In half and put the batter in a larger loaf pan. The bread would just not cook all the way through! After 90 min I gave up and just took it out of the oven bc even with foil on top, it was still getting too brown, was worried it would burn. Maybe it's my oven, I dunno bc I've never had issues before. If the bread cooked properly I'm sure it would taste lots better

Easy Lemon Cookies

Reviewed: Aug. 21, 2009
Tasted amazing! I ran out of oil so added about 1 tbsp of melted butter to make for 1/3c. I also used 2 tbsp of lemon juice as well as zest instead of extract. While the first batch was cooking, I put the rest of the batter in the freezer. When the first batch finished, it tasted ok. When i made the other batches that had come out if the freezer, the lemon taste was much more pronounced! Definitely refridgerate if you can or freeZe batter for about 10 min if you are crunched for time before baking. It makes all the difference!!!

Pepperoni Burgers

Reviewed: Aug. 9, 2009
Yummmmm added an extra clove of garlic, used wheat germ instead of breadcrumbs....meant to add Italian seasonings to the wheat germ but forgot, and also used turkey pepperoni instead is regular. My grill broke, so I shaped the mixture into patties and baked it for 350 for 55 min or so. Served it with pizza sauce. This recipe is being saved for sure!

LauHilLau Cookies

Reviewed: Aug. 2, 2009
I made these with a few Of the girls and we fell in love!! Kept everything as is. Used quick cooking oats and smart balance butter. Also used the half splenda half sugar mixture for the white sugar. Will definitely be making these again! Oo and now that I think a about it, I did use 2 whole bananas instead of half. One of my friends can't wait to make these cookies for her boyfriend bc she loved the ones we made so much!

Emerald Green Risotto

Reviewed: Jul. 8, 2009
Made this for friends and they loved it!! A few changes i made based on what i already had. i used barley instead of the rice bc i have had it around for so long, i wanted to finally use it. I also had regular snap peas/pea pods, whatever they are called rather than sugar snap peas. I added carrots instead of green beans just bc i didnt any beans, otherwise, i would have added them. I used lower sodium broth as well. Tasted delicious!!!

Angel Food Cake III

Reviewed: Jul. 1, 2009
A little denser than i would have liked. Tasted liked angel food cake, but texture just wasn't there, but that could have been because i used 1C flour, minus 2tbsp,plus 1tbsp of cornstarch instead of cake flour. Tastes even better though with whip cream and strawberries!!

Spinach Brownies

Reviewed: Jun. 13, 2009
Taste, its a 5, but i just couldnt get the toothpick to come out clean everytime i checked it. I finally gave up at 50 min and just took it out. It was a little mushy when i tried to eat it, but the next day it was solid. I added olives and sundried tomatoes, and also used half ww flour....not sure if any of that changed the texture when cooking. I'll most likely make this again!

Rhubarb Blueberry Muffins

Reviewed: Jun. 11, 2009
Ive never even really heard of rhubarb, but figured this recipe looked tasty, so thought i'd give it a try! I used an additional 1/2 tsp of baking powder and only 1/2tsp of salt as recommended. The dough was sticky and tough to handle when trying to put the batter in mini muffin pan. I was able to make 20 mini muffins and almost a whole pan of regular sized muffins.

Lemon Herb Chicken

Reviewed: May 28, 2009
I don't know why people aren't enjoying this recipe, i think its tastes great!! I was trying to make use of chicken in different ways than i normally do. The broth mixture was pretty much gone by the time the chicken was cooked through, but when i added the water and cornstarch, it thickened up the broth and herb mixture just as it should have! The only change was using thyme instead of basil bc i that's what i had on hand. I'll definitely make this again, easy and delicious!

Chicago Dip

Reviewed: May 24, 2009
So i can't exactly give this this a fair rating because i changed it, so this rating is based on how i changed it. I cut both the mayo and sour cream in half and added cream cheese. The dip tasted way too much of cream cheese, too strong for my tastes, although everyone else seemed to enjoy the dip. I also couldn't taste the spinach as strongly as i would have hoped, i even added a whole 16oz bag instead of 10! The longest part of making this recipe was trying to get all of the water out of the spinach, it was INCREDIBLY time consuming!!! although, i wasnt sure how to get the water out, so i kept using paper towel after paper towel to dry the spinach...i should have left the spinach out for a whole day instead of half a day. Not sure i'll be making this dip again

Chewy Peanut Butter Brownies

Reviewed: May 18, 2009
Very tasty! I used crunchy peanut butter. I also did add about 1/3C of chocolate chips as well as frosting them with chocolate frosting, but next time i think i will just use the frosting...having that much chocolate takes away from the peanut butter and i love the peanut butter flavor!

Apple Squares

My family loved this!! I used half the total amount of sugar, though, and added 1/4c apple juice. I thought this may have made it a little dry, but everyone else loved it, and thats all that matters!!
