Tempeh Reuben
This was very good, first time trying Tempeh and loved it. I marinated it for a bit with olive oil, ginger, and garlic then pan fried it for about 5 minutes in the marinade, otherwise followed the recipe. I will make this again...probably tomorrow!

Paige's Feta Slaw
I enjoyed this for workday lunches. I added shredded carrots and craisens. Will probably add something crunchy next time.

Sausage 'n' Spinach Eggs
I really liked this...cooked it on Sunday for a quick healthy breakfast during the hectic week. I omitted the sausage and just combined everything in a mixing bowl, poured it in a pan and baked it. Yummy - Thanks
