Big Soft Ginger Cookies
This is the second time I have made these cookies. Both times I took advice from many reviews and chilled the dough before forming the cookies. Both times the cookies turned out flat as a pancake. Well, actually a pancake would be thicker than what I came up with. So halfway through baking, I added about 1/4 cup of flour to the dough. So, I got to the last of the dough, it wasn't much, about 6 cookies worth. I didn't bother putting the dough back in the fridge/freezer. It wasn't working anyway. So I formed my 6 cookies, didn't bother flattening them either, and sprinkled some sugar on top. Well, wouldn't you know it, the last 6 cookies turned out awesome. Nice and fat like they should be. Lesson learned? Reviews can be very helpfull, and most of the time they tend to enhance the recipe. But it's usually a good idea to follow the recipe as is the first time, then take some of the recommendations given or come up with your own if you need to. Regardless of how flat these came out for me, they tasted great.
