San Antonio Salad

This was awesome for a ladies lunch. I accidentally skipped the pinto beans and jalapeno, but it still tasted great!

YUM! Delicious and easy. I doubled this so we could have leftovers and served with BBQ sauce instead of chutney. We really liked this one.

White Bean with Fennel Soup

We really liked this as a light starter for a meal. I used chicken broth instead of vegetarian, because that is what I had on hand.

We really liked this salad-the vinaigrette complimented all the fruits and veggies nicely. I made this ahead of time, but added the apples right before serving so they wouldn't brown.

Butter Brickle Frozen Delight

YUM!!! This is an awesome dessert-very rich and gooey and great to serve on a hot day. The nice thing is, this also re-freezes wonderfully so you can keep the leftovers for another time and it will taste like you just made it.

Wonderful dessert! I used a frozen pound cake that I thawed for this. It was a huge hit for our Father's Day BBQ.

I used a boneless pork roast for this recipe. The combination of rosemary and oranges complimented each other nicely. Great served with mashed potatoes.

Thai Shrimp and Noodles

Very good! I made a pound of angel hair, so I doubled the sauce and shrimp. I also did not have fresh ginger, so I used ground instead which was fine.

Sweet Pork Slow Cooker Chili

Delicious and easy! Don't let the long list of ingredients fool you-this is a very simple recipe. I used regular paprika and regular apple cider and topped our servings with sharp shredded cheddar. We really liked this dish!

Sweet-and-Sour Skewered Shrimp

Nice, quick and easy. I had to broil these because it was raining on the night I made this dish. I would recommend only cooking the shrimp for 3 minutes per side, to avoid overcooking.

Deliciously Sweet Salad with Maple, Nuts, Seeds, Blueberries, and Goat Cheese

Reviewed: Jun. 9, 2009
This was awesome! I made some substitutions based upon what I had in the house. I used raspberries instead of blueberries, bleu cheese instead of feta and goat cheese and olive oil in place of the grapeseed oil. Delicious-I will definitely make this one again!

Yum! Great marinade-I only marinated for 24 hours (the oliva oil mixture was congealed after one night). The chicken was tender and flavorful. Also, I broiled these kabobs for 20 minutes on high in my oven as it was raining the night I made these.

Spinach Cheese Manicotti

Reviewed: May 26, 2009
I have never had luck without boiling the noddles for any pasta dish, so I made this by boiling the noodles ahead of time and stuffing them with the mixture. I didn't mix the water in with the sauce-I just used lots of extra sauce in mine so it wouldn't be dry. I let it sit at room temperature for about 30 minutes before baking at 375 for about 40 minutes and it was wonderful.
